Burrata is a fresh cheese characterized by a creamy interior with a strong flavor but never pungent.

Combined with this cold tomato soup will ensure a simple dish but at the same time tasty.

Another strong point of this recipe is that, cooking for a very short time, it will not lose its nutritional values, making it also healthy.

Let’s start:

COLD TOMATO SOUP WITH BURRATA CHEESE

Ingredients for 4 people: 12/15 CLUSTER TOMATOES – 250 G BURRATA CHEESE – 4 CROUTONS – BASIL – EXTRA VIRGIN OLIVE OIL – SALT AND PEPPER

Preparation:

Wash the tomatoes and cut them from the base with a knife. Dip them in boiling water for 40/50 seconds.

Then dip them in a bowl with cold water; this procedure will make them easier to peel.

Peel the tomatoes and place them in the mixer (also the immersion type will do).

Season with salt and pepper and sprinkle with oil. Blend.

Cut the burrata into small pieces.

Pour the soup into a deep dish and complete with the crouton bread on which you will place a large scoop of burrata cheese.

Finish by adding extra virgin olive oil and a few leaves of basil.

Enjoy your meal!
