For my vegan friends, today I post this simple recipe for a dessert made with carrots.
What can I say, besides that it is simply irresistible? A healthy dish suitable even for those who like desserts!!!
HIGH AND FLUFFY CARROT CAKE (VEGAN)
Ingredients for 4 people: 280 g of flour – 60 g of almond flour – 240 g of carrots – 90 g of sunflower oil – 160 g of raw cane sugar – 200 g of vegetable milk – 1 sachet (16 g) of natural yeast – 1 pinch of vanilla powder
Wash and peel the carrots, cut them into small pieces and chop them with the mixer until they are chopped rather finely.
In another bowl pour the flour, the almond flour, the brown sugar, the yeast and the vanilla.
Mix well, then add the vegetable milk and sunflower oil and mix everything, concluding with the addition of the chopped carrots.
Pour the cake dough into the baking tin lined with baking paper and bake in a preheated static oven at 180 ºC for 45 minutes.
When the surface is golden and the interior well cooked (check the evidence of the toothpick), take your cake out of the oven and let it cool completely before serving in slices.
