The recipe is really simple and you can have fun doing it with your children.

DOUGH FOR FRESH PASTA WITHOUT EGGS
Ingredients for 4 people: 300 g Spelt flour (or regrind durum wheat semolina) – about 100 ml water – 2 tablespoons Olive oil – a pinch of salt
Sift the flour on a pastry board and form a hole in the center.
Add the oil and salt and begin to knead from the center, adding the water gradually.
Pay attention to the water, the amount will change depending on the type of flour used: if you use white spelt flour, you will need to add about 100 ml of water.
If you use regrind wheat semolina, you must calculate that for 300 grams of semolina you must add 150 ml of water.
The dough will be ready when it is soft but not sticky.
Before using your dough, let it rest covered with a cloth for about thirty minutes.
Once the resting time has passed, simply roll it out with a rolling pin or a pasta machine to prepare tagliatelle, lasagne, etc.
The advantage of making fresh pasta without eggs? It will be much lighter and easier to digest!
