As promised yesterday, today we will see how to prepare the dough for fresh pasta with the original recipe, that is, with eggs.
Often when we talk about fresh pasta and bread we are frightened because they may seem very complicated, in fact they are not at all.
You just have to have a little patience in rolling out the dough, but the preparation is really simple.
DOUGH FOR FRESH PASTA (2) WITH EGGS
Ingredients for 4 people: 300 g flour 00 – 3 eggs – salt
Arrange the flour on the working area (save a small amount to use as needed) and add the eggs in the center. Mix with a fork until the mixture is no longer liquid, then knead vigorously on the pastry board until you get a homogeneous dough, smooth and elastic, which will be placed inside a bowl covered with film.
Let stand for at least 1 hour at room temperature.
Roll the dough with a rolling pin on the pastry board until you get the desired thickness.
If you use a machine, using a tarot, cut a portion of the dough, leaving the remaining dough inside the bowl with the film so as not to dry it. Just add a bit of flour it and roll it with a rolling pin enough to adapt it to the width of the machine.
Depending on the type of pasta you want to prepare, just cut out strips of different widths (those for noodles will be about 2-3 mm, while for pappardelle, typical Italian large pasta, will be 5-8 mm).
