Saving at home – Béchamel sauce

Often we tend to buy readymade béchamel sauce, in my opinion it’s a mistake since to prepare it at home takes very little time. In addition, this recipe is ideal for creating tasty dishes even for a last minute lunch or dinner!

The original version includes the use of milk, but if you want a richer recipe you can also add cream.

Let’s start:


Ingredients for 4 people: 50 g butter – 50 g flour – 1/2 liter of milk (for a richer recipe you can use 250 ml cream and 250 ml cream) – nutmeg (optional) – pepper salt


In a saucepan melt the butter over moderate heat; add the flour, stirring with a whisk.

Pour the cold milk (and the cream in case you chose the richest recipe), all at once continuing to stir until it boils.

Add salt, reduce the intensity of the flame and cook for at least twenty minutes covered and stirring occasionally: the béchamel sauce must not taste like flour. Then, remove from heat, adjust if necessary the salt and, if desired, flavor with a pinch of nutmeg.

In case the béchamel sauce is too firm, just add some milk. If, on the contrary, it is too liquid, you just have to put the saucepan on the stove and add a knob of butter with very little flour.
