Saving at home – Quick brioche bread (sweet)


Hi everyone!

How about trying to prepare a delicious brioche bread? An easy recipe to have a sweet bread suitable for breakfast or a snack.

Let’s start:


Ingredients for 4 people: 130 g of flour – 90 g of melted butter at room temperature – 2 eggs at room temperature – 85 ml of warm water – 4 g of dry brewer’s yeast – 1 salt intake – 2 eggs at room temperature – 2 tablespoons of honey – 1 orange. For the surface: 1 whole egg – 1 tablespoon of water – granulated sugar to decorate


Pour the lukewarm water into a large bowl and dissolve the yeast, stirring with a spoon. Let it rest for about 10 minutes.

Beat the eggs in a dish, then add them in the bowl with the yeast together with the melted butter (at room temperature), and the honey.

Add the flour and grated orange peel.

Stir with a spoon until creamy and smooth. Cover with film and let it rise at room temperature for 30 minutes, then place in the refrigerator for 24 hours (for a maximum of 48).

After this time, take the dough from the refrigerator and leave it at room temperature for 30 minutes. Sprinkle the surface with a little flour and with your hands divide it into three portions of the same weight.

On the floured board, give the three balls a regular shape, making them rotate in your hands downwards. Place them inside a plum cake mould covered with baking paper

Cover with a cloth and let it rise for 2 hours, the dough should almost reach the edge of the mold. In a bowl beat the egg together with the water and use them to brush the surface of the brioche.

Add as much sugar as you like. Bake in a preheated oven at 180 ºC for about 30-40 minutes, covering the surface of the brioche with aluminium foil in case it browns too much.

Remove from the oven and let it cool before serving.
