EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
The combination of zucchini with saffron and smoked scamorza will make this dish original and tasty.
Another simple recipe that will guarantee you a very successful dinner!
PACCHERI (SHORT PASTA) WITH SMOKED SCAMORZA, SAFFRON AND ZUCCHINI
Ingredients for 4 people: 400 G PACCHERI (SHORT PASTA) – 150 g smoked scamorza cheese – 2 zucchini – 1 sachet of saffron or 10 pistils – salt and pepper
Cut the zucchini into cubes eliminating, if in excess, part of the white pulp inside. If you use saffron in pistils, soak them in warm water.
Sear the zucchini in a pan with a little oil. Pour in some white wine or water, season with salt and continue cooking over low heat for about 10 minutes.
Add the saffron powder or pistils to the sauce and mix. In a mixer chop the scamorza previously made into slices.
Boil the pasta in salted water and drain. Sauté the pasta in a pan and at the end of cooking add the scamorza.
Mix quickly and prepare the dishes by adding a handful of scamorza on each portion.
