The burrata cheese (a very soft mozzarella cheese) has a sweet and full taste that is best expressed when the cheese is served at a cool temperature.
To fully appreciate its taste qualities it is preferable to use it without cooking.
TUNA TARTARE WITH PISTACHIOS AND BURRATA CHEESE
Ingredients for 4 people: 400 g fresh tuna – 200 g Burrata cheese – 100 g salted pistachios shelled – the juice of 1/2 lemon – extra virgin olive oil – salt and pepper
Cut the tuna into slices about a centimeter high and then cut them into cubes with the help of a sharp knife.
Chop the pistachios with a knife or in a mixer. Season the tuna with lemon, salt, oil and pistachios.
With the help of a round aluminum mold, form tartare discs and complete with a spoonful of burrata cheese right before serving.
