The ricotta cheese is a precious ally in pastry baking because, in addition to being light, it increases the softness of the preparations.
This is why in muffins and donuts it is perfect, especially if enriched with fresh fruit and chocolate.
RICOTTA AND CHERRY MUFFINS
Ingredients for 4 people: 200 g cottage cheese – 100 g sugar – 100 g flour – 2 eggs – 1/2 sachet of baking powder – 200 g cherries
In a bowl mix the ricotta, sugar and eggs.
Then add flour and the baking powder and the cherries previously pitted and divided in half.
Place the dough in muffin paper cups and bake at 180 º C for about 25 minutes.
Let cool and serve.
