Saving at home – Risotto with anchovies, lemon and burrata cheese

EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE

Hi everyone!

The combination of burrata cheese and anchovies has become a must in Italian cuisine and you can use it for both simple croutons and more elaborate dishes such as risotto with anchovies, lemon and burrata.

The burrata, with its sweetness, tempers the strong tones of anchovies. is a cheese that is often combined with fish, from mussels to clams, up to shrimps.

If you do not have it at home, you can get a similar result by replacing it with ricotta cheese, but I recommend you try the original recipe because it is really special.

Let’s start:

RISOTTO WITH ANCHOVIES, LEMON AND BURRATA CHEESE

Ingredients for 4 people: 350 g carnaroli rice – 250 g burrata – 6 anchovy fillets in oil – l l vegetable broth – rind of 1 lemon – oil -salt

Preparation:

In a pan pour a little oil and let it heat. Add the anchovies and with the help of a little broth let them dissolve almost completely.

Add the rice and let it take color. Cover with the broth and add more if the preparation dries too much.

Cut the burrata cheese into pieces.

Plate the risotto and complete with a grated lemon peel and a few pieces of burrata. If you want to give some color you can conclude with a sprinkling of thyme and chives.
Serve hot.
