The caponata (similar to the French ratatouille), is a simple dish but that is rich in taste where the eggplant, zucchini, celery, tomatoes and peppers with the addition of spices, are well combined creating scents of the Mediterranean flavors.
You can store it for 2/3 days in the fridge in a glass container covered with film. It should be served cold with slices of homemade bread or croutons.
Having trouble digesting the peppers, I have eliminated them from the recipe and I guarantee that it is delicious the same.
Let’s start:
SIMPLE CAPONATA (RATATOUILLE IN FRENCH)

Ingredients for 4 people: 400 g eggplants (medium) – 200 g carrots – 350 g zucchini – 300 g potatoes – 180 g pepper – 1 rib celery – 100 g cherry tomatoes (ripe, or the same amount of sauce) – 1 onion – capers – mint – basil – some capers – oregano -salt – 1 tablespoon sugar – q.b. white wine vinegar (or a little vegetable broth) – some black olives – pepper – extra virgin olive oil
Preparation:
Clean and wash all vegetables except tomatoes and onion, dice them.
In a pan put plenty of olive oil, bring it to the right temperature without smoking and start frying the eggplant cubes until they take color. With a skimmer, remove them from the oil and place them on a plate. In the same oil (if necessary add more oil) fry the carrots, celery, zucchini, potatoes and at the end the peppers.
Finally, in the remaining oil, fry the sliced onion and add the diced tomatoes (or tomato puree).
Mix, cook over medium heat and add the capers, chilli, all fried vegetables, black olives, sugar and vinegar (or a little broth), add salt and pepper to taste. Sauté the vegetable caponata to flavor the whole
Transfer the vegetable caponata to a serving dish, sprinkled with oregano, mint leaves and basil.
Let cool and serve with croutons or slices of homemade bread.
