Saving at home – Mackerel fillet salad with white beans, tomato and onion

This recipe can be served both as a cold fish appetizer, but also as a second course, it is really easy to make and requires less than half an hour between preparation and cooking.

If you do not have time or desire to bake the canellini and/or the fish, you can buy them ready.

Let’s start:

MACKEREL FILLET SALAD WITH WHITE BEANS, TOMATO AND ONION

Ingredients for 4 people: 3 medium size mackerel fillets (you can also use those packaged in oil) – 4 ripe tomatoes – 3 onions – 200 g. of boiled cannellini beans (also ready) – parsley – the rind of an untreated lemon – the juice of 1 lemon – extra virgin olive oil – salt and pepper

Preparation:

Clean the fish, steam for about 10 minutes, putting in the water with some parsley, an onion and a little pepper; let it cool, remove the skin, bones and cut into pieces.

In a salad bowl put the remaining onions cut and very thin slices, the tomatoes cut into wedges and the white beans, add the fish and season with oil, salt, pepper, lemon juice, and its peel cut into slices and chopped parsley.
