Here we are with another super easy and tasty recipe: fried fennel, suitable both as a side dish and as a delicious appetizer.
Ingredients for 4 people: 4 fennel – 50 G flour – 2 eggs – 20 ml grappa (or apple vinegar) – 10 ml olive oil – coarse salt – 200 ml peanut oil – 1 teaspoon salt
Boil 2 lt of water in a pot and add the coarse salt.
Clean the fennel and remove the green buds and the spoiled leaves. Cut them into not too large wedges. Dip them in boiling water and boil for 5 minutes.
Drain them on a kitchen towel and let them cool.
Meanwhile, make the batter by breaking the yolks in a bowl. Keep the egg whites aside.
Add the sifted flour, salt, grappa (or apple vinegar) and olive oil to the yolks.
Mix with a whisk until you get a homogeneous mixture without lumps.
Let the batter rest in the refrigerator for at least 30 minutes covered with film.
Pour the oil into a pan and bring it to temperature. Take the batter back from the refrigerator.
Whip the egg whites with a pinch of salt.
Add the egg whites to the batter from bottom to top to keep it fluffy and creamy.
Dip the fennel slices in the batter, covering them well.
Let them fry, a few at a time, for 5 minutes, turning them gently until they are cooked.
Drain them gradually on absorbent kitchen paper, add salt and serve hot.
