EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Fish skewers can be easily found ready-made, but actually preparing them at home is really easy and it also allows you to choose the types of fish and vegetables you want to add.
The result, thanks to the colors of the vegetables, will be very pleasant!
FISH AND VEGETABLE SKEWERS
Ingredients for 4 people: 150 slice of swordfish – 100 g squid – 1/2 red pepper – 1/2 yellow pepper – the juice of half a lemon – 1/2 grapefruit – 1/2 orange – 3 sprigs thyme – 1 bunch of parsley – 1 red onion – 1 clove of garlic 40 ml extra virgin olive oil – pepper and salt
Start by preparing the sauce:
Peel the orange and grapefruit, also removing the skin and seeds. Cut into wedges and then into small pieces inside a bowl, so as not to disperse the juice.
Peel the garlic and cut into thin slices.
Wash the parsley and let it dry well. Finely chop the leaves.
Finely chop the onion.
Beat half of the oil in a bowl with salt, pepper and two tablespoons of lemon juice.
Add the pieces of fruit and the juice, the parsley, the onion and the minced garlic.
Let the sauce rest, covered, for at least an hour.
Meanwhile, prepare the skewers:
Cut the swordfish into cubes.
Remove the squid from its skin and clean well (taking care to remove the ink blister, beak and eyes with a pair of scissors). Finish by spilling the bag, washing it repeatedly under running water. Drain well.
Wash the peppers and drain them. Remove the seeds and the white inner filaments. Cut them into cubes.
Beat the remaining thyme leaves, lemon juice and oil in a bowl. Season with salt and pepper.
Put on two long skewers the swordfish, the squid and the peppers alternating between them.
Heat a grill or a steak pan very well and cook the skewers 5 minutes per part, sprinkling them often with lemon sauce.
Serve the skewers accompanied with the citrus sauce on the side.
