EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
The ricotta cake is a classic breakfast cake with an easy recipe that is prepared in just 20 minutes.
Ingredients for 4 people: 250 g ricotta – 200 g flour – 4 eggs – 50 g corn starch – 250 g granulated sugar – the grated rind of 1 lemon – 100 g melted butter at room temperature – 16 g baking powder for cakes – icing sugar
In a bowl, beat the ricotta cheese with the sugar until smooth and homogeneous. Add the eggs with the grated lemon rind and mix with a spatula.
Finally add the flour, the corn starch and the yeast. Mix again and finally add the melted butter at room temperature.
When the mixture is smooth and homogeneous transfer it inside a 22 cm mold, buttered and floured. Level and bake in the oven at 180 º C for about 45-50 minutes. Do the test of the toothpick to see if the cake is ready.
Take it out of the oven and let it cool.
Serve your ricotta cake with a sprinkle of icing sugar.
