Saving at home – Eggplant rolls


Hi everyone!

As you may have guessed, I am a big fan of eggplant and I always have some in the fridge!!!!
In addition, they have the great advantage of being very versatile in the kitchen and can be used in a variety of recipes.

Today we will see how to prepare simple rolls enriched with a cheese filling and tomato sauce.

Let’s start:


Ingredients for 4 people: 4 small eggplants – 125 g Mozzarella – 4 tablespoons breadcrumbs – 4 tablespoons grated Parmesan – 3 tablespoons tomato sauce (if you want, you can put even more) – a few basil leaves – SUNFLOWER oil for frying – extra virgin olive oil – salt and pepper


First peel the eggplant, cut into slices lengthwise and fry in hot oil.

Separately, add the breadcrumbs to the grated Parmesan and a handful of chopped basil. Add a pinch of salt and the extra virgin olive oil needed to obtain a fairly firm dough.

Put on each eggplant slice a little of this dough, then a strip of Mozzarella and create a roll, which you will close with toothpick. Proceed in the same way with all the ingredients till they finish.

In a baking dish put a bit of tomato sauce on the bottom, lay each eggplant roll, cover with more sauce and bake at 180° for about twenty minutes.
