If you are looking for a pasta dish a little different from the usual? Then you are in the right place!
Everyone will love this pasta salad, even vegans (just omit the parmesan cheese).
PASTA SALAD WITH AROMATIC HERBS
Ingredients for 4 people: 350 g short pasta – 1 ripe tomato – 1 sprig of parsley – 1 bunch of basil – 1 sprig of mint – 5 sprigs of thyme – 1 tuft of marjoram – 1 clove of garlic – 100 g pistachios – 1 tablespoon pitted black olives – 40 g parmesan cheese ( to be omitted in the vegan version) – 50 ml extra virgin olive oil -1 tablespoon coarse salt – salt and pepper
Start by cleaning all the herbs and collect the leaves.
Peel the garlic and the pistachios.
Put these ingredients in the mixer and start intermittently so that it does not heat up too much.
Add salt and pepper.
Grate the Parmesan cheese into flakes.
Wash the tomato, cut it in half, remove the water and finally cut it into cubes.
Cut the olives into rings.
Put 3, 5 l of water in a pot and, when it has started to boil, add the coarse salt.
Pour the pasta into the water and cook for 11 minutes.
Drain the pasta in a bowl and add the previously prepared herb sauce.
Add the diced tomatoes, olives and, finally, the parmesan flakes.
