Saving at home – Tuna and potato meat loaf

Are you looking for a recipe that is simple to prepare but also very effective? Then, even today you are in the right place!

This meatloaf can be prepared in two versions: baked or a fresher one without cooking.

Let’s start:

TUNA AND POTATO MEATLOAF

Ingredients for 4 people: 500g of boiled potatoes – 2 tablespoons of mayonnaise – 20g of capers under salt – 1 egg – a knob of butter – 2 cans of drained tuna – a trickle of olive oil – salt and pepper – 150g of mozzarella or scamorza

Preparation:

Blanch the potatoes in boiling salted water. Let them cool on a plate.

Put the potatoes, tuna and mayonnaise in a mixer.

Add salt, pepper, activate the mixer and add an egg and oil. Transfer the mixture to a bowl and add the capers.

Mix well.

Grease a plum cake mold and sprinkle with breadcrumbs, put half of the mixture in the mold, roll out a layer of mozzarella and cover with the rest of the mixture.

Decorate with some capers.

Bake in a bainmarie for 20 minutes at 180 ºC. Allow to cool before slicing.

If you do not want to use the oven or look for a fresher recipe, also suitable for the summer, you can replace the mozzarella with creamy cheese (Philadelphia type) which you will put inside the potato mixture inside the plumcake mold lined with plastic wrap, finally spread a layer of cheese and close with the other half of the mixture.

Seal with cling film and let stand 3 hours in the fridge. When the meat loaf is well firmed, transfer to a serving dish, reversing the mold and sprinkle with capers.
