EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Here we are with Easter sweets originating from the Italian region of Calabria; colorful, tasty and easy to make!
COLORED EASTER COOKIES
Ingredients for 4 people: 1 kg of flour, 4 eggs, 330 g of sugar, 125 g of butter at room temperature, 1 sachet of vanillin, 1 sachet of baking powder, 20 g of ammonia for cakes, 130 ml of warm milk, the grated rind of a lemon. To decorate the surface: 3 yolks, colored sugar decorations.
Put the flour on a pastry board and form the classic fountain.
Heat the milk slightly in a saucepan and, once warmed, divide it into equal parts in two containers (each about 65 ml of milk).
Dissolve the ammonia sachet in one of the two containers.
In the other, dissolve the baking powder.
Pour in the center of the fountain 4 whole eggs, the sugar, the butter in pieces, grated lemon peel, the vanillin sachet and the milk.
Start mixing the ingredients inside the fountain with a fork, slowly incorporating the flour on the outside.
When it is quite dense, start kneading with your hands.
Work the dough to obtain a soft, homogeneous and, above all, not sticky dough.
If it sticks to your fingers, add some more flour.
Once you have obtained the dough, create the shapes with the classic cookie cutters or with your hands: just take a piece of dough, create a cord about 1 cm thick and about 20–25 cm long.
Then roll the two ends of the cord on themselves as if they were a double swivel.
Once all the shapes have been created, beat in a cup 3 egg yolks.
Brush all the biscuits with the egg yolks and sprinkle with colored sugar.
Place the Easter cookies on the baking sheet (well spaced) covered with baking paper and bake for about 15 minutes in a preheated oven at 180 ºC.
