The olive cream is a tasty preparation to be used in different ways, and especially for appetizers and entrèes.

It’s really quick and easy to make.

You can spread it on bread croutons with the addition of a slice of cheese.

For the vegan version, simply omit the slice of cheese or you can replace it with a soy cheese.

Let’s start:

OLIVE CREAM

Ingredients for 4 people: 200 g black olives – 1 clove of garlic – 1 anchovy fillet – 1 pinch of salt – 35 ml of extra virgin olive oil + the necessary to cover the cream For the croutons: 4 tablespoons of olive cream – 150 g of creamy cheese – 4 slices of bread

Preparation:

First remove the core and clean the anchovy fillet.

Transfer the pitted olives and the anchovy in the blender together with the clove of garlic and a pinch of salt and begin to blend. While smoothing the olives, add the extra virgin olive oil to the top.

Leave the blender in action until you have obtained a smooth and homogeneous cream, which you transfer in a jar and cover with a drizzle of oil.

Cut four thick slices of bread and toast them in the oven, using the grill function. Once ready, spread on it a generous spoonful of cream cheese and a spoonful of olive cream.

The croutons are ready to be served!

You should definitely try to make these savory pancakes, ideal for an appetizer, which are prepared with only 3 ingredients: water, flour and baking powder!

Just put everything in a bowl, stir, let rise and finally fry. In a few steps you will make delicious golden pancakes, fragrant and also suitable for vegans!

Let’s start:

SAVOURY PANCAKES

Ingredients for 4 people: 500 g flour – 500 ml water – baking powder (3,5 g) – 1 teaspoon sugar – 1 teaspoon salt – oil for frying

Preparation:

In a large bowl put the flour, water, baking powder, salt and sugar and work with a whisk until you get a smooth and homogeneous batter.

Once the batter is ready, cover it with food film and let it rise in a warm place for about an hour (the oven at a minimum heat is fine).

After the leavening hour, heat abundant oil in a large pan; the ideal temperature that the oil must reach is about 170-180 degrees.

Take the batter in spoonfuls and pour it into the hot oil; this operation is easier with 2 tablespoons, one to take the batter and another to push it into oil.

Fry the pancakes until golden brown, turning them with a skimming ladle (about 3 – 4 minutes of cooking). Cook the pancakes, lay them on paper towels to remove excess oil.

Serve the savoury pancakes still warm accompanied by a nice platter of cold meats and cheeses!

This velvety basil cream is an enveloping cream, characterized by a beautiful bright green color together with the light flavor of low-fat yoghurt.

You can taste it alone, with a handful of golden bread croutons, or use it as a sauce for pasta and risotto.

Let’s start:

BASIL COLD SOUP

Ingredients for 4 people: 150 g basil – 250 g low-fat yoghurt – 50 g grated Parmesan – 50 g shelled walnuts – bread – extra virgin olive oil – salt and pepper

Preparation:

First, carefully wash the basil leaves under running water, then dry them with a cloth.

Transfer the basil in the blender glass, add the grated Parmesan cheese, the shelled walnuts and a couple of tablespoons of extra virgin olive oil, then salt and pepper.

Turn on the blender until you have obtained a smooth and homogeneous sauce, which you will pour into a bowl.

Mix it with low-fat yoghurt and then divide the basil soup into four bowls, serving it as an appetizer, accompanied with bread croutons.

Preparation:

Cut the cheese into slices about half a centimeter thick and use them as a base for your canapés.

On each of the slices put a teaspoon of jam, alternating tastes to your liking: sweet jams or even salty, (made with onions, for example).

Serve cold decorating with basil leaves.

The honey, then, will create a contrast appreciated by everyone, young and old.

Let’s start:

ENDIVE BOATS WITH CHEESE AND ORANGE HONEY

Ingredients for 4 people: 1 Belgian endive – 330 g of Certosa CHEESE (or other cream cheese) – 2 tablespoons of cooking cream – 40 g of chopped walnuts – 40 g of ham (or other sliced meat like turkey) – 3 tablespoons of orange honey – chives q.b.

Preparation:

Wash the endive leaves thoroughly and let them dry.

In a bowl work the Certosa (or other cream cheese) with cream, softening it with a fork. Add chives, speck (or dried beef or sliced turkey) in small pieces and chopped walnuts.

Work until you get a homogeneous compound.

Arrange the endive leaves on a serving plate and place in each leaf a teaspoon of filling.

Before serving, decorate with orange honey.

This vegetable roll is an original variant of the sushi, which borrows from the Japanese tradition the rolled preparation of uramaki and osomaki, but with the typical ingredients of Greek cuisine.

An inviting appetizer, also ideal for brunch, or for a fresh and tasty summer lunch. Few ingredients will allow you to bring to the table a tasty and appetizing dish: here’s how to make it.

Let’s start:

GREEK STYLE VEGETABLE ROLLS

Ingredients for 4 people: 150 g chickpea hummus – 125 g cherry tomatoes – 100 g black olives – 100 g feta – 1 cucumber – lemon slices – little dill or parsley – salt

Preparation:

Cut the olives and tomatoes into cubes of about 5-7 mm; reduce the feta to coarse crumbs.

Peel the cucumber and then cut into strips along the length: they should be thin enough to roll, but not too thin to break, I recommend using a potato peeler, or a sharp knife or a mandolin for this purpose.

Put two strips of cucumber on top of each other; spread a thin layer of hummus over the cucumber. 

Add the chopped olives, tomatoes and feta, and season with a pinch of salt.

Roll the cucumber; continue until the cucumber strips and the filling ingredients are used up.

Serve with a sprig of dill and a sprinkle of lemon juice.

Saving at home – Raw tomatoes stuffed with ham mousse (or turkey)

This summer recipe is both delicious and versatile: suitable as an appetizer but also to enrich a buffet.

In addition to everything, you will prepare them in exactly 5 minutes!

Let’s start:

RAW TOMATOES SUFFED WITH HAM MOUSSE (OR TURKEY)

Ingredients for 4 people: 4 large salad tomatoes or 8 medium salad tomatoes – 400 grams of cooked ham (OR TURKEY) – 250 ml of fresh cream – 4 tablespoons of tomato puree – 1 teaspoon of desalted capers

Preparation:

Wash the tomatoes very well and dry them, then with a knife remove the part with the stem and with a teaspoon dug inside to remove the pulp. This operation should be done very gently to avoid piercing the tomato. The pulp of the tomato can be used for a fresh sauce. Season each tomato with a pinch of salt and let it rest on a plate.

Meanwhile prepare the cooked ham (OR TURKEY) patè:
Blanch the tomato sauce in a hot pan with a little oil and a couple of tablespoons of water. As soon as it begins to shrink turn off the fire. This way the sauce will not be sour.

In a mixer put 400g of cooked ham (or turkey) and about half of the cream. Blend well, add the warmed tomato sauce. Whip the cream aside and add it gently to the ham (or turkey) mixture.
With the cream obtained stuff the tomatoes and decorate with capers (well desalted).

Leave in the refrigerator until serving, then bring to the table and add a drizzle of extra virgin olive oil.

Cut the pear into thin slices, unshell the nuts and cut into grains.

Compose the recipe alternating a slice of bresaola, one of mozzarella, the pear and the walnut grain. Finish with the balsamic vinegar glaze, salt, pepper and olive oil to taste.

ROASTED CHICKPEAS

Ingredients for 4 people: 450 g cooked chickpeas – 1 tablespoon semolina – 1 teaspoon salt – 1 teaspoon sweet paprika – olive oil – pepper – rosemary

Preparation:

First, drain the chickpeas, rinse and dry with kitchen paper (it’s important not to skip this step, or the humidity will slow down the cooking).

Put them in a bowl with semolina, salt, paprika and pepper and stir to distribute evenly.

Spread them on a non-stick baking pan lightly greased with oil, season with olive oil and rosemary and cook for about 30 minutes at 200 º C, in a ventilated oven already hot, turning them halfway through cooking and operating the grill during the last minutes.

The crispy chickpeas are ready: you can eat them hot, warm or even cold.
