Saving at home – Artichoke puffs

These days I am proposing many artichoke based recipes since it’s their season now and I like them very much!

These puffs are really delicious and… easy to make.

Let’s start:

ARTICHOKE PUFFS

Ingredients for 4 people: 1/2 teaspoon baking soda – 1/2 teaspoon baking powder -8 anchovies or anchovies in oil – 8 artichokes – 200 grams flour – Salt – 1 egg – 100 grams white cheese – q.b. oil for frying – 2.5 deciliters whole milk – 1 lemon

Preparation:

Start preparing the artichoke puffs by cleaning the artichokes. Take the artichokes, wash them under plenty of cold water and remove the hardest outer leaves. Remove the central hay with a knife. Take the artichokes and place them in a bowl with water and lemon juice to prevent them from darkening.

Take a pot with salted boiling water and cook the artichokes for 10 minutesDrain and flip them on paper towels. In a bowl pour the milk, lemon juice, egg, yeast, baking soda and sifted flour. Add salt and stir until you have a creamy batter.

Take the cheese and cut it into small cubes. Arrange a little cheese in each artichoke with an anchovy filletDip the artichoke in the batter and fry in plenty of hot oil for about 2 minutes per side.

Serve hot.

Saving at home – Artichoke quiche with potatoes

Inspired by one of the most famous French pies, here is the recipe for a tasty quiche, with artichokes, potatoes and feta cheese.

Let’s start:

ARTICHOKE QUICHE WITH POTATOES

Ingredients for 4 people: 1 puff pastry (roll) – 3 artichokes – 100 grams feta – 400 grams potatoes – 50 grams rocket – 1/2 lemon – q.b. extra virgin olive oil – Salt – Pepper – 1 clove garlic

Preparation:

Clean the artichokes by removing the stems, the outer leaves and the hay (the central part). Cut them into wedges and soak in a bowl with water and lemon juice, to prevent them from blackening. Clean the potatoes, but without peeling them, and not too thin. Cook the vegetables in a pan for about 10 minutes with a little oil, a pinch of salt and a ground pepper.

Line a baking sheet with parchment paper and rub on it a clove of garlic cut in half.

Transfer a 24 cm diameter disc of puff pastry into the mould and fill with potatoes, artichokes and the feta into small pieces. Cut the edges of the dough and cook for about 20 minutes in a preheated oven to 200 º.

After the time, take out the quiche, decorate with some rucol salad.

Saving at home – Baked artichokes

These artichokes baked in the oven are a complete and tasty dish, very simple to prepare: delicious artichokes covered with a crispy and tasty crust, slightly spicy, made with bread and pecorinoparsley and basil complete, and enrich this delicious recipe.

Let’s start:

BAKED ARTICHOKES

Ingredients for 4 people: 8 artichokes – 1 lemon – 1 cup breadcrumbs – 1 bunch parsley – 1 bunch basil – 50 g grated pecorino – 2 cloves of garlic – chili pepper – extra virgin olive oil – salt

Preparation:

Clean the artichokes, remove the harder outer leaves and leave about 3 cm of stem. Cut them in half lengthwise, remove the hay and transfer them in cold water acidulated with lemon juice.

Peel a clove of garlic and sauté with a little extra virgin olive oil in a baking pan (resistant to the heat of the oven).

Remove the garlic, add the artichokes, season with salt and cook over a low heat for 20 minutes, wetting with a little water.
Pass the breadcrumbs to the mixer and mix it with 1 pinch of chili pepper, pecorino cheese and the mix prepared with the remaining garlic, parsley and basil (also chopped).

Sprinkle the artichokes with a little olive oil, sprinkle with the prepared mixture and pass under the grill to gratin until a golden crust is formed. 

Serve these artichokes in the oven hot as a side dish or (in larger portions), as a main dish.
