Saving at home – Mini Dessert with cream and raspberries

These mini desserts with cream and raspberries are tasty and delicate single servings, ideal to serve after dinner.

The recipe is very simple and it can be prepared in a short time. In 25 minutes they are ready to be served. Practically perfect!

If you don’t find the raspberries, you can replace them with other seasonal fruit.

Let’s start:

MINI DESSERTS WITH CREAM AND RASPBERRIES

Ingredients for 4 people: 250 ml of whole milk – the peel of 1 untreated lemon – 2 yolks – 50 g granulated sugar – 30 g corn starch – 150 ml whipped cream – 40 g powdered sugar.
To garnish: raspberries – fresh mint leaves – icing sugar

Preparation:

Bring the milk to the boiling point along with the finely grated lemon zest. Meanwhile, in a separate saucepan, beat the egg yolks with sugar using a pair of electric whisks.

Add the sifted corn starch to the whipped eggs, all at once, and stir to blend perfectly. Pour on the mixture hot milk, flush, stirring constantly. Put on the heat and let the cream thicken, stirring often, until it is boiling. At this point remove it from heat, transfer it into a glass bowl, cover with contact food film and let it cool.

Whip the cream, very cold from the refrigerator, in a container with the help of an electric mixer and, when it begins to become consistent, add the sifted powdered sugar. Continue to whip until the final consistency and then incorporate it into the custard cream which, by now, should have reached room temperature. Take care to perform this operation very gently and in several times, stirring with a spatula from bottom to top.

Transfer the diplomatic cream so obtained inside single-portion cups, garnish with raspberries, mint and sprinkle with icing sugar to taste. You can immediately serve the mini desserts with cream and raspberries or keep them in the refrigerator until consumption.

BAKED FIGS WITH ALMONDS

Ingredients for 4 people: 8 dried figs – almonds cut in half – water

Preparation:

This treat is really practical:

Cut the dried figs in half and moisten with water (with the help of a brush).Put the almond on each half by making a slight pressure.

Bake in a preheated oven at 180° C. for 15 minutes.

Once taken out of the oven you can decorate with orange peel.

Saving at home – Ricotta and fig dessert

Figs are one of my favorite fruits, when summer arrives I eat them in industrial quantities and my favorite combination is with ricotta.

So I decided to make a super quick dessert, with ricotta and figs.

It is ready in 20 minutes, simple to make and it can really save your dinner.

Let’s start:

RICOTTA AND FIG DESSERT

Ingredients for 4 people: 50 g of digestive biscuits – 25 g of almonds (plus extra to decorate) – 250 g of ricotta – 60 g of sugar – 2 figs

Preparation:

Finely chop the almond and the biscuits.

Work the ricotta with the sugar. Take two cups and make a layer of cookies.

Add the ricotta cream.

Decorate with figs and almonds and serve.

Here we are again today with A DESSERT recipe for a that cannot be missing in your cookbook: The donut yogurt cake, soft, light and as always very easy to make!

For this yogurt donut is a cake where no ingredient should be weighed, in fact a clean yogurt jar is used as a measuring tool.

A quick dessert with a certain result, which lends itself to being stuffed with jams, custard and any other filling you can think of.

Let’s start:

LARGE YOGURT DONUT CAKE

Ingredients for 4 people: 3 eggs – 3 jars of flour – 2 jars of sugar – 1 jar of natural yogurt of 125 g – 1 jar of seed oil – 1 sachet of baking powder – 2 tablespoons of milk – butter – icing sugar

Preparation:

To prepare the yoghurt donut, start by putting eggs, flour, yoghurt, sugar, oil, yeast and milk in the blender, mixing until a homogeneous mixture is obtained.

Grease a 24 cm diameter large donut mold, sprinkle with powdered sugar, pour the mixture and place in a preheated oven at 180 ° to cook for half an hour.

Let it cool before removing it fom the mold.

Serve the yogurt donut after covering it with powdered sugar.
