Saving at home – Tender chocolate cake

The tender cake, a chocolate tart typical of the area of Ferrara, has a soft texture with a dark interior, which melts in the mouth at every taste. 

An easy recipe, which is prepared in just 15 minutes and with a few ingredients: dark chocolate, butter, sugar, eggs and very little flour.

Let’s start:

TENDER CHOCOLATE CAKE

Ingredients for 4 people: Ingredients for 4 people: 200 g dark chocolate 65% – 100 g butter – 90 g granulated sugar – 60 g flour 00 – 4 eggs at room temperature – 1 pinch salt

Preparation:

Chop the chocolate and melt in a bain-marie together with the butter. Transfer all in a large bowl and let cool. Add one egg yolk at a time, the salt and half of the sugar. Work with electric whisk.

Add the sifted flour and mix with a spatula. Whip the egg whites with the remaining sugar (not too firm) and incorporate them several times, with movements from bottom to top.

Pour the mixture into a 22 cm mould in diameter buttered and floured (or coated with parchment paper). 

Level and bake in the oven already hot at 180 º C. for about 15-18 minutes. The cake tenerina should not be overcooked inside, but wet. 

Allow to cool completely before turning out.

Before serving, sprinkle with icing sugar.

And who says that vegan biscuits are not good? You will see that if you try these you can no longer do without!!!

Let’s start:

VEGAN COCONUT AND CHOCOLATE COOKIES

Ingredients for 4 people: for the dough: 130 g flour – 20 g cocoa – 70 g cane sugar – 70 g water – 50 g corn seed oil – 8 g baking powder – 30 g coconut flour – 80 g chocolate chips. For decoration – 40 g dark chocolate – coconut flour

Preparation:

Knead the water, brown sugar and oil in a large bowl, then add the sifted flour, cocoa and yeast and continue to mix until you get a homogeneous mixture.

At this point add the coconut flour and the chocolate chips: mix well, making sure that all the ingredients don’t accumulate only in a part of the dough.

If you use the cookies shoot gun, form a ball with the dough and wrap it in plastic, then put it in the refrigerator to rest for at least half an hour. This way you will avoid having too soft and sticky dough. If you don’t have a biscuit gun, you can avoid to put the dough in the refrigerator and you can form directly on the baking pan balls that then you will go to flatten or using a glass, in order to have the cookies all of the same size.

At this point bake the vegan biscuits: cook them in a ventilated oven at 180° C. for 15 minutes.

Once they are ready, let them cool and in the meantime melt the dark chocolate in a bain-marie pot, then use it to garnish the surface of the cookies. To finally give a final touch, sprinkle with coconut flour and serve.

These vegan cookies with coconut flour and chocolate chips are really delicious and will appeal to everyone: in addition to everything, they are dietetic so you will not jeopardize your fitness! Try them and let me know how they turned out.

As promised yesterday… here we are with the recipe of the homemade Nutella.

WithJ just a few small tricks you will get a delicious Nutella in a very short time.

Let’s start:

HOMEMADE NUTELLA

Ingredients for 4 people: 80 g of shelled hazelnuts – 25 ml of seed oil – 30 g of raw cane sugar – 5 g of bitter cocoa – 2 drops of vanilla essence – 150 g of milk chocolate

Preparation:

The first secret to avoid that the homemade Nutella has a “grainy” consistency is to use raw cane sugar.

First, lightly roast the hazelnuts in a saucepan, keeping the heat rather high but shaking them from time to time making sure that they do not burn. It’ll take a few minutes, so don’t let them out of your sight!  

Once they are toasted, put the hazelnuts (still hot), in the mixer and start to chop.  Insist until the hazelnuts begin to release their oil and then reach a rather creamy consistency.  

At this point, add the raw cane sugar in the mixer and continue to stir for a few minutes, then transfer everything in a bowl and add the cocoa, mixing well with the rest of the mixture. 

Now put the milk chocolate in a saucepan and let it melt over very low heat.

In the meantime, add to the cocoa mixture also the cornflower oil and vanilla essence, then mix well.

Finally, add to your homemade Nutella also the melted chocolate and mix well with a spatula, until you get a thick and soft cream.

Put it in a glass jar, close it well and let it rest in the refrigerator for about 2 hours.

Saving at home – Nutella roll

I know… this cake is a real attack on our fitness… but tell me how long I haven’t put on a Nutella recipe.

In addition to being good… I’d specify, very good, it is also rather simple in it’s preparation.

Let’s start:

NUTELLA ROLL

Ingredients for 4 people: 4 eggs – 130 g flour – 50 ml milk – 130 g sugar – 250 g Nutella (1 jar) – 1/2 sachet of baking powder – 1 sachet of vanillin

Preparation:

Preparing the Nutella roll is not complicated at all.

First, prepare the sponge cake: beat the eggs together with the sugar in a large bowl until you get a nice mixture light and fluffy, then add the flour, milk and vanilla.  Mix well all the ingredients, then add the yeast to the mixture.

*If you prefer a more “chocolatyroll, you can add 2 tablespoons of cocoa powder to the mixture.

At this point, pour the mixture for the sponge cake into your baking sheet covered with parchment paper previously wet and squeezed very well.

Bake your sponge cake, which must have a thickness of about half a centimeter, in the oven at 190° for 10 minutes.  Once cooked, take it out and turn it upside down on a damp cloth then roll it up immediately so that the sponge cake is more comfortable to work.

At this point, roll out your sponge cake and stuff it with Nutella, then roll it up again with wet hands.  This could be the only operation a bit more difficult: you have to be careful not to break the dough base and a little secret is to moisten it slightly if it seems too dry. If you want you can also use a dessert sauce: in this way it will be easier to roll and the taste will be even more special.

Before serving your Nutella roll let it rest at least 30 minutes, then sprinkle with icing sugar or cocoa powder to your liking.

Your Nutella roll is ready to be enjoyed and I assure you that everyone will really like it!!!!

Finally I found this vegan recipe for a dessert ready in 15 minutes, but enviable to the classic creams.

HAZELNUT PUDDING (VEGAN AND GLUTEN FREE)

Ingredients for 4 people: 200 ml almond milk – 2 tablespoons cornstarch – 2 tablespoons hazelnut paste – 1 teaspoon cocoa powder – 40 g chopped hazelnuts

Dilute the cornstarch in 80 ml of almond milk.
 
Heat the remaining almond milk and add the diluted cornstarch. Then add the hazelnut paste and cocoa.
 
Mix over medium heat. When the mixture has thickened, turn off the fire.
Pour into small bowls and decorate with chopped hazelnuts. Then refrigerate for 1 hour before serving.
 
The hazelnut pudding is ready!

This recipe is really easy. It’s up to you to decide if you want to stuff them with almonds, chocolate or honey before putting them in the oven.

Let’s start:

BAKED FIGS

Ingredients for 4 people: 4 ripe figs – chocolate – sugar -butter -honey – almond grains

Preparation:

Wash the figs well. Cut into 4 parts without reaching the bottom.

Put a fig in a small oven dish and open it slightly with your hands. Now add a piece of butter and sprinkle with a little bit of sugar.

We can also use a piece of chocolate to stuff our fig.

Or we can make a very tasty variant with honey and almond grains.

Bake for 10 minutes at 180° C.

The baked figs are ready.

Saving at home – Magic lemon and vanilla cake

A single dough to create a dessert with 3 different layers: flan, cream and sponge cake.

Just a treat, that’s all!

Let’s start:

MAGIC LEMON AND VANILLA CAKE

Ingredients for 4 people: 112g flour – 140g sugar – 500ml milk – 125g butter – 4 egg yolks – 4 egg whites – 1 grated lemon peel – 1 vanilla pod (OR A SACHET OF VANILLIN)

Preparation:

Warm up the milk.

Add the vanilla stick (or the vanilla sachet) and let it infuse for 15 minutes. Then turn off the heat and let it cool.

Meanwhile melt the butter.

Pour the egg whites into a bowl and whip until stiff.

In another bowl beat the egg yolks with the sugar.

Add butter and stir.

Now add the milk little by little.

Then the flour and the grated lemon zest.

Finally, with the help of a spatula, add the whipped egg whites and stir gently.

Now butter and flour the mold.

Pour the mixture inside, level the surface with a spatula and bake for 50 minutes at 150° C.

Let cool 1 hour at room temperature, then put the mold in the fridge for another 2 hours (This step is IMPORTANT because it is in the fridge that the three layers are formed).

Once ready, decorate with icing sugar.

Saving at home – Soft plum tart

This tart, besides having a soft dough, is also very easy to make.

Let’s start:

SOFT PLUM TART

Ingredients for 4 people: 220 grams of flour 00 – 80 grams of sugar – 140 grams of butter – 2 eggs – 7 grams of yeast for cakes – grated peel of a lemon

Preparation:

In a bowl, mix the sugar with the flour, the lemon peel and the yeast.

Add the butter and start to work, then also incorporate the eggs: you will get a very soft and sticky dough, a bit of a middle way between a tart pastry and the dough of a normal cake.

Wash the plums, remove the stone and cut into wedges.

Put the dough in the mold covered with baking paper and try to level it as much as possible, with the back of a spoon.

Place the plums on the surface, sprinkle with sugar and cook for about 45-50 minutes or until golden brown, in a static preheated oven at 180 º C.

The soft plum tart is ready, let it cool before serving.

Stuffed figs are a very special and tasty appetizer. The combination of gorgonzola and bresaola, creates a contrast of flavors really appetizing.

If you don’t like gorgonzola, you can replace it with other soft cheeses, such as stracchino.

Let’s start:

STUFFED FIGS

Ingredients for 4 people: 8 figs – 80 grams of bresaola cut into strips – 150 grams of gorgonzola (or other soft cheese) – chopped almonds – 1 teaspoon honey

Preparation:

Wash the figs well, dry and cut them, creating 4 segments without separating them at the base.

Cut the gorgonzola into cubes and the bresaola in little squares and brown the latter on a non-stick pan, making it brown on both sides.

Assemble your appetizers, putting in first a little cheese, then the bresaola and concluding with almonds and a drop of honey.

The stuffed figs are ready.

Saving at home – Mascarpone Mousse

Here we are with a special dessert: that of the mascarpone mousse; You will absolutely adore it!

Let’s start:

MASCARPONE MOUSSE

Ingredients for 4 people: 500 g Mascarpone – 1 l fresh cream to be whipped – 100 g icing sugar vanilla – little aroma to rum (or little fruit juice) – hazelnut granules

Preparation:

Put the whipped cream and vanilla sugar in a bowl. Then, with the help of an electric mixer, start to mount everything at maximum speed until you get a well-firm compound.
Take the Mascarpone, put it in a bowl and knead it into a cream together with the rhum aroma (or a little juice).

Once worked, add it in spoonfuls to the mixture of cream and sugar, taking care to mix all with delicacy and with movements that go from bottom to top, so as to avoid disassembling the mixture. Continue in this way until the cheese is exhausted.

Once all the ingredients are used up, you will get a soft and thick mascarpone mousse.

Place it inside small cups. Then, sprinkle with hazelnut grains

Before serving, cool in the refrigerator for at least two hours.
