EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Little time for cooking?? You don’t have a mortar in which to crush the pesto?
If you have a mixer available, you can make a great sprint pesto without much effort.
Ingredients for 4 people: 80 grams basil – 1 walnut kernels – 50 grams pine nuts – 1 clove garlic – 100 grams grated parmesan – 1/2 glass extra virgin olive oil – salt
Prepare the ingredients. Wash carefully 70-80 grams of basil leaves and dry. Peel 1 clove of garlic, cut it in half and remove the bud. Toast the pine nuts in a saucepan.
Prepare the quick pesto. Put the toasted pine nuts, the clove of garlic, the grated Parmesan cheese, 1 walnut kernel, a pinch of salt and half of the extra virgin olive oil in the blender; blend until you get a cream.
Turn off the mixer and add the basil leaves, turn on the mixer again, adding the remaining oil until you get a fluid sauce.
At this point, the pesto sprint is ready to season pasta, enrich meat or fish dishes or to be spread on bread croutons.
