Saving at home – Fake egg white pizza with cooked ham (or turkey) and scamorza cheese

You can’t call it a real pizza, but the appearance and the filling are very appealing!

You can prepare it in a short time and is suitable for young and old.

The original recipe includes cooked ham, but you can easily replace it with turkey.

Let’s start:

FAKE EGG WHITE PIZZA WITH COOKED HAM (OR TURKEY) AND SCAMORZA CHEESE

Ingredients for 4 people: 200 g egg whites (6-7 egg whites) – 100 g baked ham cut into slices – 50 g smoked scamorza – 40 g sun-dried tomatoes in oil – fresh thyme – extra virgin olive oil – salt – black pepper

Preparation:

Start by mixing the egg whites with salt and pepper. Transfer the mixture, one spoon at a time, inside a 24 cm diameter tart mold lined with parchment paper. Without pressing too much spread it on the entire surface of the mold, taking care not to leave empty spaces. Transfer in preheated oven at 200°C for 5 minutes.

Bake and fill immediately with ham (or turkey), the chopped scamorza and the well drained dried tomatoes from their oil. Cook again in the oven always at 200 º C. for another 5 minutes or until the cheese is melted.

Bake and serve immediately the fake egg white pizza with ham (or turkey) and scamorza sprinkled with some thyme leaves.

A different way to make a tuna dish? The salty tuna muffins are cute and above all super delicious, perfect for appetizers. The addition of olives makes this recipe really tasty!

Like almost all recipes I post, these muffins are easy to do!

Let’s start:

SALTED TUNA MUFFINS

Ingredients for 4 people: 125 grams flour – 100 ml milk – 1 egg – 30 grams seed oil – 150 grams drained tuna – 50 grams pitted black olives – 1/2 sachet of baking powder – salt

Preparation:

Put in a bowl the liquid ingredients (milk, egg and oil) and stir.

In another bowl put the dry ingredients (flour, salt, yeast, tuna, olives and a pinch of salt).

Pour the liquid ingredients over the dry ones and mix.

Distribute the mixture in the cupcakes, filling them for 3/4, then cook for 15-20 minutes at 180C, in a ventilated oven (already hot).

Yes, that’s all: your salted tuna muffins are ready, let them cool before serving.

Saving at home – Caesar’s Salad (USA)

The Caesar Salad was invented in 1924 in the restaurant of Caesar Cardini, an Italian-American, in Tijuana, Mexico.

The original recipe of Caesar’s Salad also includes an egg in the sauce emulsion (which I replaced with a tablespoon of mayonnaise).
My version also provides for the replacement of bacon with bresaola.

Let’s start:

CAESAR’S SALAD (USA)

Ingredients for 4 people: 250 grams of salad – 60 grams of bresaola – 4 slices of bread – 30 grams of Parmesan cheese in flakes – 2 tablespoons of lemon juice – 2 tablespoons of lemon juice – 2 tablespoons of lemon juice – 1 teaspoon of worcester sauce – 1 tablespoon of mayonnaise – oil – salt – pepper

Preparation:

Brown the bresaola (dried beef) in a frying pan and, as soon as it becomes crisp, remove from the heat.

Cut the bread into cubes and brown them in the same pan where you browned the bresaola (so that the bread takes a bit of its flavor).

Prepare a sauce with 2 tablespoons of lemon juice, 2 tablespoons of extra virgin olive oil, worcester sauce, salt and pepper, and mayonnaise. Stir until you get a homogeneous sauce.

Wash, chop and dry the salad and put in a bowl. Season with a little oil.

Add the bread cubes and bresaola to the salad and season with the sauce.

Finally, add the flaked parmesan cheese to the Caesar’s salad and serve.

Saving at home – Puff pastry Cinnamon rolls

Then you must try these puff pastry cinnamon rolls… simply irresistible treats!

Let’s start:

PUFF PASTRY CINNAMON ROLLS

Ingredients for 4 people: 1 package PUFF PASTRY (RECTANGULAR) –
BROWN SUGAR – CINNAMON – 60 g Mascarpone – 2 tablespoons POWDERED SUGAR

Preparation:

Roll out the dough and roll it out lightly with a rolling pin.

Sprinkle with at least three tablespoons of brown sugar and then sprinkle the entire surface with cinnamon.

With your hands let both ingredients adhere well to the pastry, then roll it on itself, from the long side, and transfer it to the freezer, just for the time needed to preheat the oven to 200.

Remove the pastry from the freezer, cut into pieces about 3 cm long and place each cylinder on a baking sheet covered with parchment paper.

Bake for 20 minutes.

Prepare the cinnamon icing rolls by combining mascarpone, powdered sugar, vanilla extract and a few tablespoons of milk until a soft but dense icing is obtained.

Once cooked, let them cool on a grate for sweets and then glaze immediately before serving.

Easy and quick to prepare the savory pie with spinach and stracchino is an excellent alternative to the classic with ricotta and spinach, with a stronger taste.

Excellent if served hot because of the melted cheese, But can also great to be eaten cold for a quick meal in the office or at school.

Let’s start:

SPINACH AND STRACCHINO PIE

Ingredients for 4 people: 400 g FROZEN SPINACH – 1 EGG – NUTMEG – 1 Roll Puff pastry – 200 g STRACCHINO cheese

Preparation:

Defrost the spinach and squeeze it well.

Chop with a knife or pass in the mixer.

Transfer into a bowl, add the stracchino into pieces, the beaten egg together with grated cheese, salt, pepper and nutmeg.

With the puff pastry line a cake tin leaving it in its parchment paper, fill with the mixture, smooth the surface and fold the edges of dough inside.

Bake for about half an hour at 200° C.

Your spinach and stracchino cheese savory pie is ready!

Let’s start:

PUMPKIN AU GRATIN WITH CHEESE

Ingredients for 4 people: 500 g PUMPKIN – 1 walnut BUTTER – 3 tablespoons MILK – 3 tablespoons FLOUR – 1 grated NUTMEG – SAUCE 4 CHEESES (you can find it ready at the supermarket, or you can prepare it with four cheeses of your choice melted in a saucepan with a little butter, milk and salt)

Preparation:

Cut the pumpkin into thin slices and plunge them in a pot with salted boiling water.

Remove the peel and arrange in a buttered baking dish.

In a bowl mix very well with a whisk the flour in the milk and then cook in a small saucepan over very low heat, continuing to mix with a wooden spoon.

When the mixture is fluid and homogeneous incorporate the cheese sauce, nutmeg, salt and pepper.

Then pour the sauce on the slices of pumpkin and bake for 15 minutes at 200 C.

Serve hot with a final sprinkling of freshly ground pepper and decorated with butter curls.

Today’s recipe is oriented to those who want something tasty but also informal, to eat even in front of the television.

Let’s start:

CHICKPEA SNACK

Ingredients for 4 people: 250 g canned chickpeas – 1 tablespoon dry oregano – 1 tablespoon almond kernels – 1/2 teaspoon garlic powder – 1/2 teaspoon sweet paprika – 1/2 teaspoon black pepper – extra virgin olive oil – salt

Preparation:

To prepare this easy chickpeas snack, start by heating the oven to 180 º . and then lower it to 150 º. before rinsing the chickpeas, dry them well and season with extra virgin olive oil. Then finely chop the almonds and mix a large spoon in a bowl with dried oregano, garlic powder, paprika, black pepper and a teaspoon of salt, then combine the chickpeas and mix well. If you like, you can also add a curry.

Once you have mixed the spices and aromas with the legumes, line a baking tray with baking paper and arrange the chickpeas so that they do not overlap, then bake for 15 minutes and finally shake the pan. Repeat the same operation 2 more times, then turn off the oven and leave the legumes inside for another 15 minutes before serving the chickpeas snack.

In order to obtain an excellent result and get crispy chickpeas, but certainly not burnt, it is recommended to taste them during the various stages of cooking.

The basic recipe for gluten-free shortcrust pastry, is a preparation suitable for making biscuits, pies or the basis of other baked cakes.

Follow the recipe step by step and remember to roll out the dough with a rolling pin when it is cold.

Let’s start:

GLUTEN-FREE SHORTCRUST PASTRY

Ingredients for 4 people: 100 g butter – 75 g icing sugar – 20 g egg yolk – 50 g whole egg 100 g – rice flour – 25 g potato starch – 25 g rice starch – 5 g extruded powder (pulverized rice krispies)

Preparation:

What do you need to prepare the gluten-free shortcrust pastry recipe: a planetary mixer to help you prepare the dough and a rolling pin to roll it out when the dough is cold.

If you use the planetary mixer, mix the butter with the sugar with the leaf utensil until you get a smooth and slightly bleached cream.

Add the eggs with the yolk previously acclimated to 20 ° C. Meanwhile, mix the powders dry, add the rest of the ingredients in a planetary mixer and knead the dough for a few seconds at high speed.

Put the dough on a baking tray with parchment paper, form a block, wrap it in parchment paper and let it stabilize in the refrigerator for at least 2 hours.
