Yesterday we saw how to make the curry sauce.

Today we will see another very simple and tasty Indian recipe.

If you want a lighter version, you can replace the cream with a tablespoon of milk or broth.

Let’s start:

CHICKEN WITH CURRY

Ingredients for 4 people: 1 kg chicken – 30 g butter – 1 onion – 2 tablespoons flour – 2 tablespoons curry – 2 tablespoons liquid cream – 50 cl broth – dry white wine (or apple vinegar) – salt

Preparation:

First clean, wash and cut the chicken into eight parts.

Then clean, wash and chop the onion, then put to fry in butter.

Now add to the sauté also the pieces of chicken. At this point, sauté everything over a low heat, turning the meat occasionally. When the meat is well browned, add salt and blend with white wine or apple vinegar (just half a glass), then raise the flame to evaporate.

Once the wine has evaporated, add to the preparation the curry, the flour diluted separately with a little broth and the remaining broth previously heated. At this point continue cooking the meat for about 20 minutes.

After the indicated time, take the pieces of chicken and place them on a serving plate and finish the preparation by sifting the sauce left in the pan.

Finally put this mixture back on the heat and add the liquid cream. Then heat the sauce well, stirring constantly. 

Finally, cover your chicken curry with the hot sauce. Serve immediately.

With this sauce can you enrich your preparations with style and elegance? Make your own perfect curry sauce at home and you will be able to make original even a simple grilled chicken breast.

Let’s start:

CURRY SAUCE (INDIA)

Ingredients for 4 people: 1/2 small white onion – 20 g curry – salt and pepper – 20 g flour – 50 g butter – 125 ml broth

Preparation:

First, let a little finely chopped onion gently fry in a pan with the Butter.

Meanwhile, pour the curry in a bowl and add some hot water. Stir with a teaspoon until the powder dissolves.

Add the softened onion flour and stir with a wooden spoon. Add also the diluted curry, little by little, and the broth. Arrange the flavor and add a pinch of pepper.

Cook over low heat for 25 minutes. Constantly check the consistency of the curry sauce, when it has reached the one you prefer to remove from the heat. 

Your curry sauce is now ready for use.

Saving at home – Chicken salad with mozzarella

Here we are with another salad suitable for the summer: chicken salad with mozzarella.

As always an easy recipe that satisfies all tastes!

Let’s start:

CHICKEN SALAD WITH MOZZARELLA

Ingredients for 4 people: 4 thick slices of chicken breast – 10 cherry tomatoes – some salad leaves – Basil – 200 g mozzarella cherries. For the marinade: 4 tablespoons of Olive Oil – 2 teaspoons of Balsamic Vinegar Coffee – salt – Pepper

Preparation:

In a bowl add the oil, vinegar, salt and pepper and mix perfectly.

Wash the tomatoes and after drying, cut them in two and add to the marinade.

Add basil and mozzarella cherries.

Refrigerate for a couple of hours.

With a kitchen brush, spread the oil on the chicken breast slices and grill them.

Serve them warm by distributing the chicken, cherry tomatoes and the mozzarella on a bed of salad.

Saving at home – Ricotta dumplings with cream, radicchio and walnuts

Do you want to try an alternative to the usual potato dumplings? Then you have to cook ricotta dumplings, a delicate first course, easy and quick to prepare.

They are much less known than potato dumplings but they are delicious and can be seasoned in many ways.

In this recipe we prepare them with a walnut, cream and radicchio sauce.

Let’s start:

RICOTTA DUMPLINGS WITH CREAM, RADICCHIO AND WALNUTS

Ingredients for 4 people: 500 g sheep’s cheese – 1 egg – 1 tablespoon grated aged pecorino cheese – 1 teaspoon salt – 300 g flour 00
FOR THE SAUCE: 15 shelled nuts – 125 g cream – 50 g chopped radicchio – chili – garlic – salt and pepper

Preparation:

In a bowl pour the ricotta cheese and soften mixing with a fork, then add the parmesan cheese, egg and salt. Once mixed well these ingredients, add the flour a little at a time. When the mixture is thick enough continue to work in a pastry until you add all the flour.

When the dough is homogeneous, roll it with a rolling pin to obtain a sheet of dough about 2 cm thick. Then cut strips about 2 cm wide by cutting them with the knife: roll them with your hands and cut the gnocchi as evenly as possible.

Then place them in a well floured tray and let them rest a little, just enough time to prepare the sauce of cream, nuts and radicchio.

Chop the nuts shelled with a chopper. In a pan, heat a little olive oil with a clove of garlic and a little chili, then add the chopped nuts and a little after the cream and a pinch of salt; finally add the chopped radicchio.

Let warm up a bit and turn off the fire.

Boil the water, salt it and throw away the gnocchi. They will be cooked in a few minutes, when they return to the surface.

Drain and pour into the pan with the walnut sauce, rekindle the heat and mix well all adding at the end a sprinkling of pepper and grated parmesan cheese to taste.

Saving at home – Brandacujun (Italy)

This recipe, simple and delicious, which originates in the Italian region of Liguria is really good

I discovered it during my holiday near Imperia and immediately looked for the recipe to share with you.

This dish consists mainly of soaked stockfish, potatoes, parsley and olives (preferably taggiasche, the small black olives).

You can serve it as an appetizer or, in slightly larger quantities, as a main dish.

Let’s start:

BRANDACUJUN (ITALY)

Ingredients for 4 people: 800 g soaked stockfish – 700 g potatoes – parsley – taggiasche olives – garlic – extra virgin olive oil – salt and pepper

Preparation:

Cut the soaked stockfish (otherwise you have to leave it to soak for 48 hours, often changing the water), in pieces and put it in a saucepan covering it with water.

Boil the water, then turn off the heat and let it rest for 15/20 minutes.

Drain the stockfish and let it lose the liquid, then beat it with a mortar (or with a meat beater).

Boil the potatoes together with an onion, then cut into slices.

Put extra virgin olive oil in a bowl, add lemon juice, chopped garlic and parsley and chopped olives.

Pour into the pot the stockfish, potatoes and onion, salt and pepper to taste, then shake well and when it seems quite homogeneous, serve decorated with an olive, a little parsley and in cups or directly in the dish.

Saving at home – Melon sorbet (also without ice cream maker)

Good morning to you all.

Here we are with an easy and quick recipe suitable for summer: the melon sorbet.

For an optimal result, I highly recommend using an ice cream maker (I bought a small and practical one).

If you don’t use the ice cream maker, you just have to have the patience to stir your sorbet from time to time.

Let’s start:

MELON SORBET (ALSO WITHOUT ICE CREAM MAKER)

Ingredients for 4 people: 1 melon with pulp – 1 lemon – 2 tablespoons honey

Preparation:

First take the melon, already quite ripe (but not too much!) and cut it into two halves. With the help of a spoon remove the seeds.

Empty the pulp. Take the two empty halves of the melon and put them to drain on paper towels.

Cut the pulp into pieces and put it in a bowl together with the honey and lemon juice. Blend everything very well. If it is too dense, add water. At this point, put the mixture in the ice cream maker and let it remain for the time necessary to reach the right consistency with the melon sorbet.

Once ready, take an empty half of the fruit and fill it with sorbetCover with food film and put it in the freezer for at least a couple of hours. Before serving the melon sorbet, take the half of the melon from the freezer, let it soften for 5 minutes, then cut it into slices as if to serve a normal melon.

If you do not have an ice cream maker, pour the mixture into a shaker (or a plastic bottle) and put it in the freezer. 

Shake the melon sorbet every hour or so, to prevent it from solidifying, until it has taken on the right consistency.

Serve in cold cups.

The lower the water content of the vegetables we choose, the easier it will be to get the crispy effect even without having a very modern oven: just choose the ventilated mode, Cook the vegetables at medium temperature until golden brown and serve freshly baked.

Let’s start:

BAKED VEGETABLE CHIPS

Ingredients for 4 people: 2 beets – 5 carrots – 500 g Jerusalem artichokes – fresh rosemary – chives – extra virgin olive oil salt

Preparation:

Wash and peel all the vegetables and then slice them thinly with a knife or with the help of a mandolin

Collect the vegetables in three different bowls after buffering them well, add a round of oil and massage them with care.

Season all the vegetables with the spices and the salt

Place the vegetables on the baking trays, avoiding to overlap them, and bake at 150° C in preheated ventilated oven. If necessary, after about twenty minutes turn the vegetables and put them back in the oven until they are crispy and golden

Pass them quickly in paper towels, add a pinch of salt (if necessary) and serve immediately hot.

This vegetable roll is an original variant of the sushi, which borrows from the Japanese tradition the rolled preparation of uramaki and osomaki, but with the typical ingredients of Greek cuisine.

An inviting appetizer, also ideal for brunch, or for a fresh and tasty summer lunch. Few ingredients will allow you to bring to the table a tasty and appetizing dish: here’s how to make it.

Let’s start:

GREEK STYLE VEGETABLE ROLLS

Ingredients for 4 people: 150 g chickpea hummus – 125 g cherry tomatoes – 100 g black olives – 100 g feta – 1 cucumber – lemon slices – little dill or parsley – salt

Preparation:

Cut the olives and tomatoes into cubes of about 5-7 mm; reduce the feta to coarse crumbs.

Peel the cucumber and then cut into strips along the length: they should be thin enough to roll, but not too thin to break, I recommend using a potato peeler, or a sharp knife or a mandolin for this purpose.

Put two strips of cucumber on top of each other; spread a thin layer of hummus over the cucumber. 

Add the chopped olives, tomatoes and feta, and season with a pinch of salt.

Roll the cucumber; continue until the cucumber strips and the filling ingredients are used up.

Serve with a sprig of dill and a sprinkle of lemon juice.

LENTIL BURGER

Ingredients for 4 people: 200 g lentils – 1 medium carrot – 1 bunch of parsley – 1/2 onion – salt

Preparation:

Start by washing and peeling the carrot, prepare the onion and parsley. Put everything in the mixer and blend.
Rinse the lentils and put the pureed vegetables in the pan with the oil, also add the drained lentils.

Let it flavor for a couple of minutes and then add water or, if you prefer vegetable broth, to cover all the lentils. Cook over a moderate heat for 30 minutes, or until the water is completely evaporated. The lentils should be well cooked: otherwise, add a little more water or broth and cook until it is cooked.

Blend the lentils with the immersion blender and make the burgers helping you with a cup of about 8 cm in diameter.

Cook in a pan with very little oil until golden brown. Your lentil burgers are ready to be enjoyed.

An original recipe, ready in twenty minutes, for a first course and rich in taste.

A recipe where the freshness of the mango, marinated with ginger and lemon, meets the delicate taste of Bresaola Punta d’anca to make you bring to the table a mix that isvery interesting and tasteful.

Let’s start:

COLD PASTA WITH MANGO AND BRESAOLA (DRIED BEEF)

Ingredients for 4 people: 320 grams of wholemeal rigatoni – One pack of Bresaola (dried beef) – 1 mango – Ginger – Lemon q.b. – Salt – Pepper – Extra virgin olive oil q.b.

Preparation:

Bring to a boil a pot of salted water in which you will cook your wholemeal rigatoni. In the meantime, cut the mango into small cubes and the Bresaola into strips.

In a bowl marinate the mango with a drizzle of extra virgin olive oil, salt, the juice of a lemon and part of its zest (grated) and the ginger.

Then leave to marinate for about 15 minutes.

Arrange the rigatoni in the dish and garnish with the marinated mango, finally completed with the Bresaola (dried beef) and a sprinkle of pepper.
