In a bowl crush the GARLIC cloves and add the oil, salt and herbs; then mix well.

Pour this preparation on the prawns.

Bake for 15 minutes at 200 C.

The prawns are ready.

This tart, besides having a soft dough, is also very easy to make.

Let’s start:

SOFT PLUM TART

Ingredients for 4 people: 220 grams of flour 00 – 80 grams of sugar – 140 grams of butter – 2 eggs – 7 grams of yeast for cakes – grated peel of a lemon

Preparation:

In a bowl, mix the sugar with the flour, the lemon peel and the yeast.

Add the butter and start to work, then also incorporate the eggs: you will get a very soft and sticky dough, a bit of a middle way between a tart pastry and the dough of a normal cake.

Wash the plums, remove the stone and cut into wedges.

Put the dough in the mold covered with baking paper and try to level it as much as possible, with the back of a spoon.

Place the plums on the surface, sprinkle with sugar and cook for about 45-50 minutes or until golden brown, in a static preheated oven at 180 º C.

The soft plum tart is ready, let it cool before serving.

Yes, you read it right! Today we will see how to prepare the chicken with tuna sauce, a delicious variant of the classic Italian version done with veal.

Let’s start:

CHICKEN WITH TUNA SAUCE

Ingredients for 4 people: 500 grams of chicken breast – 1 teaspoon of desalted capers – salt – FOR THE SAUCE: 200 grams of mayonnaise – 120 grams of tuna in oil – 1 tablespoon of desalted capers – 2 anchovy fillets – 2 tablespoons of water

Preparation:

Lightly grease a grill pan, heat well and cook the chicken for about 5 minutes per side.
Salt lightly and set aside.

In the meantime, put in the mixer mayonnaise, capers, drained tuna and anchovies (you can also use an IMMERSION MIXER if it seems more practical), adding water to make the compound more fluid.

Place the chicken on a serving plate and sprinkle with the sauce.

The chicken with tuna sauce is ready, decorate with a few capers and serve.

Ingredients for 4 people: 4 hamburgers – 1 clove of garlic – dried oregano – 150 g tomato sauce – 1 mozzarella – 8 anchovies or anchovies in oil – 4 slices of bread – extra virgin olive oil – salt and pepper – basil

Preparation:

Start by placing each burger between two sheets of baking paper and flatten slightly, using a rolling pin. Brown them in a non-stick frying pan with a little olive oil, cooking for about 2 minutes on each side. Once ready, spread a spoonful of tomato sauce on the hamburgers, season to taste with salt and add ground pepper.

Slice the mozzarella, drain and dry it with kitchen paper, then place it on the hamburgers.

Add also the anchovies, a sprinkling of oregano and chopped basil.

Preparation:

To prepare the chicken breasts with milk you must first flour the meat evenly. In a large saucepan, season the oil and butter with garlic and rosemary. Brown the chicken slices on both sides in this sauce, a few at a time, adjusting according to the size of the pan chosen. Add the parsley and season with salt and pepper.

Add the milk and cook, covered, until the milk has thickened. Transferon dishes and serve immediately the chicken breasts with milk very hot.

Let’s start:

BAKED PUMPKIN FLOWERS

Ingredients for 4 people: 12 pumpkin flowers – 350 g cow’s milk ricotta – 100 g grated Parmesan cheese – 8 anchovies in oil – nutmeg – extra virgin olive oil – SALT AND PEPPER

Preparation:

Start with the filling: drain the anchovies and cut into small pieces. In a bowl combine the ricotta cheese, 60 g of Parmesan cheese, anchovies, a pinch of salt, a ground pepper and a little nutmeg. Mix it all together.

Gently clean the pumpkin flowers: remove the pistil taking care not to break the corolla. Remove also the leaves at the base of the flower and cut the stem. Help yourself with a teaspoon for filling the pumpkin flowers with the ricotta cream.

Place the stuffed pumpkin flowers on a baking tray lined with baking paper, brush them gently with a little oil. Sprinkle with the remaining Parmesan cheese and complete with a little more oil. Bake them in a static oven at 200 º C for 5 minutes, turning the grill on in the last 2 minutes of cooking.

Your baked pumpkin flowers are ready to be served.

CURRY SAUCE (INDIA)

Ingredients for 4 people: 1/2 small white onion – 20 g curry – salt and pepper – 20 g flour 00 – 50 g butter – 125 ml broth

Preparation:

To prepare the curry sauce, gently cook a little peeled and finely chopped onion in a pan with the butter.

Meanwhile, pour the curry in a bowl and add some hot water. Stir with a teaspoon until the powder dissolves.

Add the softened onion to the flour and stir with a wooden spoon. Add also the diluted curry, little by little, and the broth. Add a pinch of pepper.

Cook over low heat for 25 minutes. Constantly check the consistency of the curry sauce, when it has reached the one you prefer to remove from the heat. 

The curry sauce is now ready for use.

Saving at home – Potato and ham (or turkey) casserole

Flans are tasty dishes that the whole family likes. The undisputed king of your table and your kitchen will in fact become a potato pie with ham (or turkey).

A dish of good appearance, the result of the presence of four special ingredients: Butter, cooked ham (or turkey), Mozzarella and caciotta (or other melting cheese).

Let’s start:

POTATO AND HAM (OR TURKEY) CASSEROLE

Ingredients for 4 people: 1 kg Potatoes – 80 g Butter – 3 eggs – 2 tablespoons grated bread – 3 tablespoons grated Parmesan – 200 g cheese or other cheese – 150g mozzarella – 100 g cooked ham (or turkey) – salt q.s. – Pepper q.q.b. – Nutmeg q.b. – butter and breadcrumbs for the mould

Preparation:

To make the potato and ham (or turkey) flan, you must first wash and boil the potatoes in a pot of plenty of salted water.

While the potatoes are cooking, cut the caciotta (or other melting cheese) and the Mozzarella into cubes. Now cut the cooked ham (or turkey) strips. Leave everything to rest.

At this point check the cooking of the potatoes. Once these are cooked, drain and peel.

Then take a large bowl and pass them in the potato masher.

When finished, add 60 g of melted butter to the mashed potatoes, the parmesan, pepper, salt and nutmeg.  Mix all the ingredients together.

Then add the egg yolks, the mozzarella cubes, those of caciotta (or other melting cheese) and the julienne of cooked ham (or turkey).

At this point proceed to whip with a pinch of salt the egg whites to firm snow and add them gently to the mixture obtained.

Finish the potato and ham (or turkey) flan by buttering and adding a sprinkle of breadcrumbs. Pour inside a baking dish the mixture obtained, level the surface, finally sprinkle with a veil of breadcrumbs and butter flakes.

Bake your flan in a preheated oven at 190 ºC. for about 20 minutes.
