You do not have time to prepare a second course but you do not want to pass directly from the entrée to the dessert?

You can cook the roast beef yourself, but if you lack time you can buy it ready from your butcher.

With this tasty roast beef flavored with balsamic vinegar you will make a great meat dish with minimum effort!

Let’s start:

ROAST BEEF CARPACCIO WITH BALSAMIC VINEGAR

Ingredients for 4 people: 400 g Roast beef (you can buy it ready or prepare it yourself with the indications below) – 200 g rocket salad (rucola) – Balsamic Vinegar from Modena – Olive oil – Salt

Preparation:

Wash the rocket salad and arrange it on the bottom of a large serving plate.

On the surface place the Roastbeef slices, one next to the other.

Season with a little olive oil, a little salt and complete with the balsamic vinegar.

The dish is ready!

If you want to prepare the roast beef yourself, here is a quick recipe:

800 g veal swivel – extra virgin olive oil – salt

Put on the bottom of a nonstick saucepan the oil and place the meat. Season with salt and put on the heat, then sauté quickly on all sides (about 10 minutes) over a high heat.

Then cover with a lid, lower the heat and cook for about 25/30 minutes. (if you like the meat red, 25 minutes will be enough).

Then let the meat cool, remove it from the pan and slice it, possibly with a slicer adjusting it to level 2, so that the slices are thin and soft.

If you like the mixture of sweet and salty taste, then you have to try to cook the roasted veal with apples, a dish that is both simple and effective.

Let’s start:

ROASTED VEAL WITH APPLES

Ingredients for 4 people: half Lemon – 1 glass of Marsala (or apple vinegar) – 800 g of veal pulp – 40 g of butter – Extra virgin olive oil q.b. – 3 apples – salt and pepper

Preparation:

Tie the meat with kitchen string (this is useful to prevent the veal from breaking up during cooking).

Heat the oil and butter in a saucepan and then brown the meat for about 15 minutes over medium heat. Once golden, completely wet the meat with Marsala (or vinegar) and let it evaporate over high heat, salt and pepper.

Cover the pot, lower the heat and cook for 50 minutes over medium heat. Meanwhile wash the apples, peel them and dip half a lemon on the pulp to prevent it from blackening. Then cut them into cubes.

Add the cubes to the meat halfway through cooking and cook. Just before the end, crush them with a fork and continue cooking, stirring occasionally. Once cooked, untie the meat, cut it into slices, arrange them on a serving plate and season with the apple sauce.

Let’s start:

TURKEY MORSELSWITH HONEY, ORANGE AND GINGER

Ingredients for 4 people: 800 g Sliced turkey breast – 100 g cooking cream – 50 g flour 00 – 5 oranges – 50 g almonds – 2 tablespoons of acacia honey – ginger – salt and pepper – extra virgin olive oil

Preparation:

Toast the almonds flakes in a pan.

Squeeze the oranges and set aside the juice.

Heat the extra virgin olive oil in a pan and brown over high heat for a few minutes.

Blend with orange juice, add honey and cream and season to taste with salt and pepper.

Cook the sauce until it has thickened.

Grate the fresh ginger over the morsels and stir, then add half of the toasted almonds.

Serve decorated with the remaining almonds.

Made with meat, vegetables, or fish, with sauce or fried: the croquettes will be loved by all, I have this time opted for the Tuna croquettes with carrot cream.

Let’s start:

TUNA CROQUETTES WITH CARROT CREAM

Ingredients for 4 people: 400g of carrots – 1 clove of garlic – 8 dl of vegetable broth – 30 ml of vinegar – 1 lime – 2 tablespoons of olive oil – 1 chilli pepper – salt. For the croquettes: 250 g potatoes – 100 g sweet potatoes – 1 package of Tuna with 240 g Olive Oil – 2 eggs – breadcrumbs – one piece of fresh ginger – salt and pepper – 2 cloves of garlic – 12 leaves of rocket – oil with chili – 80 g extra virgin olive oil – 2 cloves of fresh garlic

Preparation:

Sauté the poached garlic with chilli pepper and oil and add the carrots cut in pieces. Blend with vinegar, cover with broth and add the lime zest (if you do not find it you can replace it with lemon). Lower the heat and cook. Remove the garlic and chilli, blend everything.

Boil the potatoes, peel and pass through a vegetable mill. Add the drained tuna, grated ginger, a little salt and pepper

With the mixture make some croquettes, pass them in beaten eggs and breadcrumbs, fry in plenty of oil, drain, pass them in paper towels and let them cool.

Slice the remaining garlic clove and fry the slices for a minute. Serve the cream in individual bowls with croquettes in the center and garnish with slices of garlic and a few leaves of rocket salad.

Here we are today with an original fish recipe: the tuna Knodel with pumpkin sauce.

Here we prepare it with pumpkin sauce, but you can also serve it in broth.

Let’s start:

TUNA KNODEL WITH PUMPKIN SAUCE

Ingredients for 4 people: 300 g soft white bread – 1 box tuna in olive oil 160 g – 1 onion – 80 g flour – 3 eggs – 40 g grated cheese – 200 ml milk – 250 g pumpkin pulp – 300 ml vegetable broth – a sprig of parsley – a few drops of chives – 40 g butter – salt

Preparation:

Chop the onion, brown it in a saucepan together with the butter on low heat so that it does not take too much color then put half in a large bowl.

Add the remaining onion in the saucepan the pumpkin pulp cut into cubes and the vegetable brothcook for about 25 minutes.

Cut the bread into small cubes and put it in the bowl with the onion browned, add the beaten eggs, milk, flour, chopped parsley, a pinch of salt and mix well with your hands in order to get a mixture rather homogeneous, wet your hands if necessary to make processing easier.

Bring to a boil abundant salted water.

Let the mixture rest for a few minutes; in the meantime chop the tuna well drained with a fork and mix it with grated cheese.

Work the mixture of bread forming balls large as small nuts, create a recess in the center of each ball, deposit a little of tuna compound then reform the balls so that the stuffing remains inside.

Cook the knödels stuffed in boiling water for about 10 minutes, blend the pumpkin sauce well, arrange the sauce in four plates and place in each plate the knödels in equal numbers; complete with chopped chives and, with a little grated cheese.

Yesterday at the supermarket I saw a chopped veal that I felt very lean and since I had finished my stock of meat sauce,

I thought of preparing it again. This recipe, very easy to do, can be frozen and I guarantee you it is a great dinner saver!!

I advise you to prepare more so that you always have it at hand, since the only complication is the cooking time (about two hours)

Let’s start:

MEAT SAUCE

Ingredients for 4 people: 500 g Chopped beef – 2 tablespoonsColored tomato – 50 ml Extra virgin olive oil – 1Carota – Salt – Black pepper – 1 lPassata di pomodoro – 50 mlVino bianco (or apple vinegar) – 1 stalk of celery with leaf – 1/onion – a little parsley or chopped basil

Preparation:

Wash the vegetables, chop the carrot, celery and onion, put it together with oil in a pot, let it wither without frying, add the meat, and once browned and dry, blend with wine (or apple vinegar).

Add the tomato paste, after ten minutes add also the tomato puree and chopped basil (or parsley if you prefer), seasoned with salt, black pepper, cook at least two/three hours over a low heat, if it should dry too much dilute with a little water, If you have time can cook even longer, a prolonged cooking makes the meat sauce, even more tasty.

The ingredients necessary for this second course are very few, but of great quality. For this recipe based on breast or soft part of the chicken with orange sauce, you use all the best of the fruit, from the wedges to the skin.

Let’s start:

CHICKEN WITH ORANGE SAUCE

Ingredients for 4 people: 6 chicken thighs – 3 blond oranges – flour – 1/2 glass of white wine (or apple vinegar) – salt

Preparation:

Begin by cleaning the oranges, obtaining the zest (or, if you prefer, you can make slices) and juice. Transfer the chicken thighs in a bowl full of flour and flour them carefully from all sides. 

Brown the chicken in a pan with 4 tablespoons of oil and, once golden, blend with white wine (or apple vinegar). When the alcohol has evaporated, add half the orange juice and cook over medium heat for about 30 minutes taking care to turn the chicken thighs occasionally. Season to taste with salt and pepper

Once ready, remove the chicken and add the remaining orange juice and a tablespoon of flour to the frying pan. Stir quickly and let it thicken. Put the chicken back in the pan and cook over low heat.

Garnish the chicken with orange sauce with the grated orange peel or thin slices of the fruit and serve warm.

Let’s start:

PIZZA STYLE BURGERS WITH ANCHOVIES

Ingredients for 4 people: 4 hamburgers – 1 clove of garlic – dried oregano – 150 g tomato sauce – 1 mozzarella – 8 anchovies or anchovies in oil – 4 slices of bread – extra virgin olive oil – salt and pepper – basil

Preparation:

Start by placing each burger between two sheets of baking paper and flatten slightly, using a rolling pin. Brown them in a non-stick frying pan with a little olive oil, cooking for about 2 minutes on each side. Once ready, spread a spoonful of tomato sauce on the hamburgers, season to taste with salt and add ground pepper.

Slice the mozzarella, drain and dry it with kitchen paper, then place it on the hamburgers.

Saving at home – Chicken with mushrooms

The chicken with mushrooms is one of my favorite dishes, a recipe similar to chicken mushroom and bamboo that you usually eat in Chinese restaurants.

This too, like most of the recipes I post, is very easy to do but also very tasty.

Let’s start:

CHICKEN WITH MUSHROOMS

Ingredients for 4 people: 300 grams of mushrooms – 300 grams of chicken breast – 250 ml of broth – 1 clove of garlic – oil – salt – pepper – parsley – a pinch of nutmeg

Preparation:

Cook the mushrooms in oil, garlic, salt and pepper. Halfway through cooking, add a pinch of grated nutmeg.

Meanwhile prepare the vegetable broth.

When the mushrooms are cooked, remove the garlic clove, add chopped parsley and chop the mushrooms.

Then add a couple of ladles of broth in the mushrooms until everything is creamy.

Cut the chicken into small pieces and cook for a couple of minutes on a grill.

Put the mushrooms in a saucepan and add the chicken.

Cook the chicken with mushrooms for about ten minutes over medium heat in a covered saucepan so to flavor the chicken pieces (if it should dry too much during cooking, add more broth).

Serve with bread croutons.
