Yes, you read it right: Pear strudel. Today we will see how to prepare this typical Austrian dessert as an alternative to the version more known with apples.
It’s a tasty and delicious dessert! A perfect preparation for an unusual breakfast, for a delicious snack or as a delicious dessert at the end of a meal.
PEAR STRUDEL (AUSTRIA)
Ingredients for 4 people: For the dough: – 200 g flour 00 – 80 g wholemeal flour – 1 egg, 1 tablespoon of sugar – 50 g of melted butter – 50 g of pear juice – a pinch of salt For the filling: 1 kg of firm pears – 30 g of breadcrumbs – 70 g of brown sugar – 70 g dark chocolate in flakes – 50 g butter – 40 g pine nuts – 40 g walnut kernels – cinnamon For the finishing: icing sugar vanilla
First melt the butter in a small pan together with the pear juice. Then, sift the two flours together, forming a fountain on the pastry board. Then, put the egg, the sugar and the pinch of salt in the center. At this point, mix everything with the help of a fork.
Once the ingredients are well mixed, also add the melted butter with the juice to ensure that they are warm. Knead everything until you get a nice smooth dough. When your dough is perfectly smooth, form a ball. So, wrap it with a sheet of cling film and put it to rest in the refrigerator until it is also ready the filling that will fill it.
Wash, peel and cut the pears into cubes. At the end of the operation, season with brown sugar and cinnamon and stir everything. Then, add also the pine nuts and chopped walnut kernels. Once added the dried fruit, stir again and let flavor the filling.
With the aid of a knife, reduce dark chocolate into large flakes. Once the operation is over, brown the breadcrumbs in 30 g of butter. When even the breadcrumbs will be browned, remove the dough from the refrigerator, take a clean cloth, roll it on the worktop, then flour it and with the help of a rolling pin roll out the dough to form a thin rectangle.
When the dough is also spread, melt the remaining butter. Then, brush on the surface of the dough. Then, leaving the edges free, place the stuffing of pears and chocolate chips. Finally, sprinkle over the grated bread fried. Finish your pear strudel by closing it on the long side with the help of the cloth. Once closed, seal the ends well.
Finish the preparation by sliding the cake on a plate covered with parchment paper and brush it with the remaining melted butter. Bake in a preheated oven at 180 º C. for about 50 minutes. Once cooked, bake it, let it cool and sprinkle with powdered sugar. So, serve your delicious pear strudel.
