A simple treat that everyone will like.

To prepare these stuffed dates it takes very little time and few ingredients.

Let’s start:

STUFFED DATES

Ingredients for 4 people: 16 dates – 125 g mascarpone – 25 g powdered sugar – 20 g walnuts – a little bit of bitter cocoa powder

Preparation:

Remove the stone from the dates by making a lateral cut.

In a bowl mix the mascarpone with the icing sugar and work all together until you get a cream.

Fill them now, inside the cut, with mascarpone cream.

Sprinkle with the cocoa powder and add a walnut kernel to decorate. Put the stuffed dates in the fridge for 2 hours before serving.

Serve as a dessert.

Saving at home – Nutella Tart

Today we will see how to prepare an original tart, with Nutella instead of the usual fruit jam.

This recipe, suitable for a snack will really please everyone, young and old!

Let’s start:

NUTELLA TART

Ingredients for 4 people: SHORT pastry (you can also buy it ready) – 450 g nutella

Preparation:

First, roll out the pastry until you get the thickness of about 1 – 1.5 cm, as big as it takes to line the base of the pan.

Then grease and flour the pan and turn on the oven at 180 º, ventilated; place the pastry in the pan and cut it leaving high the side edges so that they can contain the nutella. The remaining dough will be used to create the typical tart strips, so for now put it again in the refrigerator.

At this point pour the nutella over the pastry, if it is not liquid enough let it soften in a container immerged in warm water, and spread well and evenly over the entire surface of the tart.

Now take the shortcrust pastry that you have cut out and put in the refrigerator, roll it out with a rolling pin and cut it into strips with the pasta cutter. Alternatively you can take a pinch of pasta and make long vermicelli. Lay the strips prepared over the nutella with the typical grid design of the tarts.

Bake the tart and cover with a sheet of aluminum paper to prevent nutella from drying out too much.

Let it cook for about 30 minutes (the time varies from oven to oven; the tart should be colored but not burnt).

Let the tart cool completely before removing it from the pan.

These tasty chocolate chip sandwiches are perfect for a delicious breakfast, for a healthy and nutritious snack, and are also easy to prepare.

Let’s start:

SANDWICHES WITH CHOCOLATE CHIPS

Ingredients for 4 people: 600 g manitoba flour – 250 g milk – 100 g extra virgin olive oil – 3 eggs – 1 cube brewer’s yeast – 200 g chocolate chips – 130 g sugar – milk – salt as needed.

Preparation:

In a quite large bowl mix the yeast with milk and olive oil, then add the eggs and then the sugar. When the mixture is homogeneous, start adding the flour slowly, making it mix well. Season with salt and let the mixture rise for about an hour and a half.

Then take the dough between your hands and reshape it, add the chocolate chips and continue to work the dough until the drops have become one with the dough. Now divide the compound into 8 equal parts and form balls.

Cover the balls with a cloth and let them rise again for another hour and a half. Place them on a baking tray and brush with milk to increase its softness.

Bake the chocolate chip sandwiches for about half an hour at a temperature of 180 º C.

Remove from the oven as soon as they become golden brown and let them cool a moment before eating them.

Saving at home – Kataifi (Turkey, Greece, Middle East)

Kataifi is a treat found in the geographical areas of Greece, Turkey and the Middle East

This cake is very tasty and original: stuffed with lots of dried fruit, it is delicious with walnuts and almonds but, it becomes irresistible even with pistachios.

Suitable for any season, it is also great as a gift idea for birthdays or holidays in general; with a nice tray of kataifi when you go to visit friends or relatives, you will look great!

The Kataifi dough is nothing else than a kind of phyllo dough cut into very thin threads, based on water and flour.

You can prepare it easily at home but, if you want to make your pastries quickly and easily, I suggest you buy it ready. 

It is found in many supermarkets, especially in the frozen food department and in ethnic foods.

This type of pasta is also used to wrap shrimps, for example, and to prepare appetizers.

Here we use it in the sweet version: Kataifi

Let’s start:

KATAIFI (TURKEY, GREECE, MIDDLE EAST)

Ingredients for 4 people: 500 g kataifi pasta – 250 gburro – 2 teaspoons cinnamon – 1 lemon – 300 gfrutta dry (mixed between pistachios, walnuts and almonds or choose you) – 500 gZucchero (plus 1 tablespoon) – 300 g honey – 2 cinnamon sticks – 1 egg

Preparation:

First prepare the syrup:

Dissolve the sugar and honey in 300 ml of water, cinnamon sticks and the grated lemon zest.

Bring to a boil, then turn off the heat, let cool and store the syrup in the refrigerator to cool completely.

Meanwhile, chop roughly the dried fruit chosen, mix it with the spoon of sugar, egg and cinnamon powder.
Arrange a few strands of kataifi dough on a shelf and, at the base, a little ‘stuffing.

Roll the sweets on themselves and place them on a buttered baking tray, with the filling upwards.

Pour the melted butter distributing it on the various pastries and cook your kataifi in a hot at 180° C for 30 minutes.

Bake them and, when they are still hot, pour over the syrup now very cold.

I suggest you prepare them the day before.

Because of my passion for chocolate, the recipe for chocolate muffins is a must!
Very easy and quick to prepare, they are the variant of muffins preferred by adults and children.

Let’s start:

CHOCOLATE MUFFINS

Ingredients for 4 people: 200 grams of flour – 60 grams of cocoa powder – 200 grams of sugar – 1/2 sachet baking powder – 150 ml of milk – 2 eggs – 60 grams of butter – 200 grams of chocolate chips

Preparation:

Prepare the dry and liquid ingredients separately:

Mix the flour, sugar, cocoa and baking powder.

In another bowl mix the eggs with the milk and the melted butter.
Pour the liquid ingredients on the dry ones and mix the dough with a wooden spoon.

Add 3/4 of the chocolate chips to the dough.

Grease and flour the muffin molds and pour with a spoon the mixture for 2/3 inside the molds and cover with the remaining chocolate chips.

Bake the chocolate muffins at 180 º C in a hot ventilated oven and cook for 15-20 minutes (or until sticking a toothpick in the muffin, it comes out clean and dry).

Make sure that they have cooled before you removing them from the moulds and serving them.

Saving at home – Amaretti crumble

The crumbled amaretti is a delicious dessert suitable for both breakfast or a snack.

With its strong but elegant flavor, this quick tart will amaze everyone.

The pie is made with olive oil, added by crumbled amaretti (if you are afraid that the taste is too strong, you can try to dilute it by replacing 1/3 of the amaretti with normal shortbread cookies).

The jam doesn’t have to be orange

Let’s start:

AMARETTI CRUMBLE

Ingredients for 4 people: 250 grams of flour – 100 grams oil – 100 grams of sugar – 150 grams of amaretti – 1 egg – 8 grams baking powder for cakes – 300 grams orange jam (or other you like more)

Preparation:

Put the macaroons in a food bag and crumble them.

Beat the egg with the sugar, then add the oil and finally also the flour, baking powder and amaretti, mixing well (you should get a crumbled mixture).

Divide the mixture in half and use a part to line the bottom of the mold covered with parchment paper, compacting slightly.

Spread the jam on the surface, leaving the edges free, then cover it with the remaining compound, without compacting.

Bake for about 25 minutes at 180 º C, in a preheated ventilated oven.

The crumbled amaretti pie is ready: let it cool at least before serving.

Here we are with another simple but delicious recipe: the tart with ricotta cream and cherries, a light dish and a dessert suitable for the summer season.

Let’s start:

TART WITH RICOTTA CREAM AND CHERRIES

Ingredients for 4 people: For the light pastry: 300 g rice flour – 2 eggs – 120 g Butter Santa Lucia Galbani – 100 g powdered sugar – vanilla or lemon peel – 1 teaspoon yeast
Filling: 500 g cherries – 500 g light ricotta cheese – 60 g brown sugar – 60 g powdered sugar – 1 glass of water – cinnamon – peel of half a lemon

Preparation:

Prepare the pastry kneading all the ingredients until you get a soft and elastic dough. Wrap it with cling film and let it rest for 30 minutes in the refrigerator.

Roll out the pastry to 0.5 mm thick, line a cake tin of 24 cm diameter buttered and floured. Pierce the bottom of the dough with the tines of a fork and cook at 180 º C. for about 25 minutes.

Sift the light ricotta and put it in a bowl. Add icing sugar and the grated lemon zest.

Take the stone out of the cherries; in a low and wide saucepan heat the cane sugar with a glass of water and a pinch of cinnamon.

Add the cherries and cook with the lid for 5 minutes.

Drain the cherries from the liquid; fill the shell of shortcrust pastry with the sweetened ricotta cheese and garnish the tart with cherries and, if desired, fresh flowers.

Saving at home – Vatrushka cake (Russia)

The Vatrushka cake, is a typical Russian and Ukrainian dessert, made with ricotta cheese and candied fruit.

An easy recipe that will be ready in just 45 minutes.

Let’s start:

VATRUSHKA CAKE (RUSSIA)

Ingredients for 4 people: 500 g ricotta cheese – 350 g flour – 130 g butter – 200 g granulated sugar – 300 g powdered sugar – 4 eggs – 200 g candied fruit in cubes, half a glass of rum (or juice of your choice) – 1 sachet of vanilla – a pinch of salt – berries to garnish.

Preparation:

Place the candied fruit in a bowl and sprinkle with rum (or juice).

Prepare the dough working in a bowl 3 yolks with the sugar, until you get a smooth cream. Then add the butter and the whipped egg whites (they must be cold and add a pinch of salt).

Pour the flour into the mixture, stirring constantly. Form a ball, wrap it in a cotton cloth and let it rest for at least an hour and a half. Then place the dough in a buttered pan (diameter 24 cm), piercing the bottom and cutting the excess dough.

Bake for about 15 minutes in a hot ovenRemove from the oven and pour the cream on the base of the cake, which you have prepared by mixing ricotta, icing sugar, candied fruit, the remaining egg well beaten and vanilla.

Spread the cream well and cover with a sheet of pastry that you will get from the leftover dough. 

Bake in preheated oven at 200 degrees for 40 minutes.

Let the cake cool and garnish with fresh berries.

Saving at home – Chocolate fritters

Here we are with a typical Carnival dessert of the Piedmontese cuisine (North Italy), the bignole (fritters), suitable to finish a lunch but also for a snack.

Simple and tasty can be stuffed with custard or chocolate cream.

Let’s start:

CHOCOLATE FRITTERS

Ingredients for 4 people: 240 g flour – 175 g granulated sugar – 40 g bitter cocoa – 30 g butter – 5 egg yolks – 3 whole eggs – 6 dl whole milk – 1 lemon – a pinch of salt – powdered sugar

Preparation:

Prepare the cream. Knead the egg yolks in a bowl with 125 g of granulated sugar, 100 g of flour and sifted cocoa (or an equal amount of grated dark chocolate); dilute gradually the mix with 5 dl of cold milk and transfer it in a small saucepan. Put on the heat and cook over a gentle heat for 5 minutes from boiling. Cover the cream with a sheet of baking paper and let it cool.

Get the dough ready. Pour the remaining milk into a saucepan with 1 dl of water; add the butter into small pieces, the remaining granulated sugar, a pinch of salt and the lemon zest and bring to a boil.

Add the remaining flour all at once and stir vigorously with a wooden spoon until the dough has formed a homogeneous ball that will detach from the walls of the saucepan.  Transfer the dough into a bowl, work a little to make it cool. Then incorporate the eggs, one at a time.

Fry the mixture to spoonfuls in plenty of hot oil until the fritters will be swollen and golden; drain gradually with a drilled ladle and dry on paper towels.  Do not skimp on the quantity: the pancakes must navigate in the oil; the more it is abundant, the better they swell. Keep an eye on the temperature: it must be hot, not steaming, otherwise the pancakes darken quickly, before cooking inside.

Put the chocolate cream (now cold), in a pocket with thin nozzle; make a hole with the latter in the fritters and stuff with the filling.

Sprinkle the chocolate fritters with plenty of powdered sugar and serve.

Saving at home – Quick chocolate cake

Today we will prepare a cold chocolate cake, therefore without using the oven.

It is similar to cheesecake, but its preparation is much faster.

Let’s start:

QUICK CHOCOLATE CAKE

Ingredients for 4 people: 200 g biscuits (such as shortbread biscuits or if you want a slightly lighter recipe, digestives are also good) – 100 g butter – 1 tablespoon of honey – 100 g dark chocolate – 100 g milk chocolate – 1 teaspoon of vanilla extract – 2 spoons of powdered sugar – 200 ml whipped cream – 3 spoons whipped cream to decorate – 200 g raspberries – agar agar, optional if you want the cake to thicken without putting it in the freezer but in the refrigerator

Preparation:

Mash the cookies in the mixer.

Melt the butter with the honey, then add the mashed cookies.

Spread the crushed biscuits in a baking pan, pressing well.

Divide the two chocolate bars and place them in a large bowl. Melt in the microwave for twothree minutes.

Stir in the vanilla extract (a vanillin sachet is fine too), then sift the icing sugar.

Whip the cream and add the melted chocolate.

Pour into the mold and put in the freezer for at least two hours.

If you want you can get the same result in the refrigerator, you will have to add a sachet of agar agar (cooked in a bit of water) to the chocolate and cream mixture.
