Are you looking for a single dish, a snack for an aperitif or a side dish for a second course? This Fennel salad is versatile and can be combined with both meat and fish dishes. The fennel salad has a fresh taste, perfect for hot summer days, but is ideal in all seasons.
It is an easy dish to prepare, perfect for those who do not have time to stay at the stove, but want to enjoy something fresh and captivating.
Very few ingredients and very few steps will be enough to serve this dish that will appeal especially to those who already love salads.
For the vegan version, simply omit the addition of mozzarella or replace it with soy cheese.
Ingredients for 4 people: 3 fennels – 1 Mozzarella – 2 cloves of garlic – 4 slices of bread – 4 tablespoons of extra virgin olive oil – 1 tablespoon of vinegar – SALT AND PEPPER
Wash, clean and julienne the fennel tops.
Cut the mozzarella into cubes.
Put aside and dedicate yourself to the croutons: Rub the the slices of bread with the previously washed garlic cloves.
Place the croutons on the bottom of a large salad bowl.
At this point pour over it, little by little and slowly, the extra virgin olive oil and vinegar, then let it all absorb.
Add the fennel julienne. Finally season with salt and pepper. Finish your salad by sprinkling it with cheese cubes.
Your fennel salad is ready to be served.
