TOAST PIE WITH EGGS AND CHEESE
Ingredients for 4 people: 8-10 slices of pancarré (for two layers) – 2 dl and 1/2 of broth – 1 dl and 1/2 of cream – 1 dl of dry white wine (or half of apple vinegar) – 150 g of grated gruyere – 50 g of grated pecorino – 3 eggs – a few butter flakes – salt and pepper
Place on the bottom of a buttered dish* (26 cm in diameter) some toast slices without crust. Spread over the two grated cheeses, previously salted and peppered.
Make a second layer of bread and sprinkle the surface with some butter flakes.
In a bowl beat the eggs with the cream, the wine (or apple vinegar), the broth, salt and pepper, pour the mixture on the surface of the cake and bake in preheated oven to 190°. for 15-20 minutes.
Take it out from the oven, let rest for a few minutes and serve the pie in the pan.
* For a lighter recipe, oil will also be good instead of butter.
