And who says that vegan biscuits are not good? You will see that if you try these you can no longer do without!!!
Let’s start:
VEGAN COCONUT AND CHOCOLATE COOKIES

Ingredients for 4 people: for the dough: 130 g flour – 20 g cocoa – 70 g cane sugar – 70 g water – 50 g corn seed oil – 8 g baking powder – 30 g coconut flour – 80 g chocolate chips. For decoration – 40 g dark chocolate – coconut flour
Preparation:
Knead the water, brown sugar and oil in a large bowl, then add the sifted flour, cocoa and yeast and continue to mix until you get a homogeneous mixture.
At this point add the coconut flour and the chocolate chips: mix well, making sure that all the ingredients don’t accumulate only in a part of the dough.
If you use the cookies shoot gun, form a ball with the dough and wrap it in plastic, then put it in the refrigerator to rest for at least half an hour. This way you will avoid having too soft and sticky dough. If you don’t have a biscuit gun, you can avoid to put the dough in the refrigerator and you can form directly on the baking pan balls that then you will go to flatten or using a glass, in order to have the cookies all of the same size.
At this point bake the vegan biscuits: cook them in a ventilated oven at 180° C. for 15 minutes.
Once they are ready, let them cool and in the meantime melt the dark chocolate in a bain-marie pot, then use it to garnish the surface of the cookies. To finally give a final touch, sprinkle with coconut flour and serve.
