EVERY DAY: AN EASY – FAST – AND CHEAP – RECIPE THAT SUITS EVERYONE
Yesterday at the supermarket I saw a box of basil dumplings and having a salmon fillet at home, I thought of creating a healthy but also delicious dish: the basil gnocchi with salmon, turmeric and zucchini.
The scent of the basil dumplings combined with the salmon and the zucchini resulted in a delicious dish.
BASIL GNOCCHI (DUMPLINGS) WITH SALMON, TURMERIC A ND ZUCCHINI
Ingredients for 4 people: basil dumplings (I bought them in the supermarket packaged) – 1 zucchini – 1 salmon fillet (about 200 g) – 2 tablespoons turmeric – mixed spices (oregano, thyme) – 1 clove of garlic – 2 tablespoons extra virgin olive oil – salt
Start by cleaning the zucchini and cutting it into cubes.
Cut the salmon into small pieces. Put a pan with 2 tablespoons of extra virgin olive oil and fry the garlic clove peeled and cut in half. Remove the garlic from the frying pan once it is brown.
Sauté the zucchini for about 10 minutes, then add the salmon, the spices and the turmeric powder. Season with salt.
Bring the water to a boil.
Once the water is boiling, add salt and pour the gnocchetti.
When the dumplings come to the surface remove them and put them in the pan with the salmon and the zucchini. Cook for a few more minutes (so that the sauce is absorbed by the dumplings), remove from heat and serve immediately.
